In the 1990s, when low-fat and no-fat foods dominated the wellness landscape, Oldways offered a strikingly different vision for nutrition, one grounded in both science and tradition. It was, of course, the Mediterranean Diet, a delicious and nutritious eating pattern that prominently featured olive oil, nuts and other healthy plant foods (a far cry from the low-fat diets of yesteryear).

Today, people are embracing dietary fat like never before... As in decades past, the Mediterranean diet offers a delicious blueprint for balanced meals in which healthy fats play a significant nutritional, historical and cultural role.

When you cut into a loaf of whole grain bread, do you ever think about how you’re participating in a tradition thousands of years old? Archaeological examples of bread making date back 14,000 years, but actual pieces of preserved bread found in archeological digs are few and far between, which makes some recent finds particularly exciting. Bread has held special historical importance to Mediterranean cultures, with new discoveries in Switzerland and Turkey highlighting bread’s central role in ancient Roman and Anatolian cultures.

Generations of Asians and visitors to Asia have marveled at its foods and dishes. Nutrition science is now documenting the reasons why these delicious varied and traditional cuisines are healthier than “modern” food.

Like the traditional Mediterranean diet, the traditional Asian diet is built upon a base of healthy whole grain, buttressed by leafy green vegetables and soybeans, small amounts of fish and meat, bounteous spices and herbs – all tied together with healthy soy and peanut oils. While the geographic scope is wide and the dishes and specific foods of Asian cuisines vary, it is the pattern that is similar.

This is the reason it is effective to use the Pyramid as a dietary guide. Despite their differences, almost all traditional Asian diets share a common eating pattern of vegetables, strong spices, rice and noodles, tofu and soy products, and seafood in coastal communities. Vegetarian traditions are strong in many Asian countries, with pulses and whole grains such as millet and barley, all enlivened with soy sauce, fermented fish sauce, or various spicy condiments.

A Taste of the Mediterranean (ATOTM) is a cooking and nutrition program, made up of six-lessons that bring the Mediterranean Diet Pyramid to life. In each weekly class class, participants explore the major food groups of the Pyramid while learning healthy eating habits with simple, delicious recipes based in the foods and flavors of the Mediterranean Diet.
