Meet Tyson Smith ’98, founder and w**emaker at Copious Cellars. A PSU graphic design graduate, Tyson brings his creative spirit to every vintage. Guided by “passion over production,” his approach to small-batch w**emaking celebrates curiosity, connection and the stories shared around a table.

For fans of bold reds: meet Copious Cellars’ 2024 Syrah. The fall insert describes ripe dark berry aromas, subtle smoky notes and a peppery finish. Pair it with steak au poivre, smoked brisket or a hearty lamb tagine for a cozy fall meal.
Rosé has a place at the fall table, too. Copious Cellars’ 2025 Grenaché Rosé offers strawberry and floral aromas, a silky texture and a refreshing finish. Try it alongside creamy brie, fresh burrata with olive oil or strawberry balsamic crostini.
Meet Prism: a 2023 blend of Grenache, Syrah and Mourvèdre with dark berry aromas, smoky notes and an earthy character. Smooth and savory, it’s a delicious companion to wild mushroom ragout, pork shoulder or a plate of aged gouda.
