We are a food & wine club I would like to take this opportunity to warmly welcome you to La Chaine des Rôtisseurs, Canberra Bailliage. We are affiliated with The International Chaîne des Rôtisseurs, a society dedicated to preserving the traditions of fine dining, traditions that go back in French history to the 13th century. The Chaîne des Rôtisseurs, an international gastronomic society, founded

in Paris in 1950, traces its origins back to 1248. At that time, the French King Louis IX (later canonized as Saint Louis) wishing to thank the trades which had contributed to the construction of Sainte Chapelle, ordered the establishment of several professional guilds, one of which was the "Oyeurs" or goose roasters. The vocation of this guild was to improve the technical knowledge of its members: apprentices, tradesmen and masters. Over the decades its activities and privileges were expanded. For more than four centuries the ‘Confrérie des Rôtisseur' cultivated and developed the culinary arts, meeting all the requirements of professionalism and quality demanded by the "Royal Table", until 1793 when the guild system was dissolved during the French Revolution. The Rôtisseurs were completely forgotten until 1950, when Dr. Auguste Bécart, the well-known journalists Jean Valby and Curnonsky (elected "Prince of the Gastronomes"), and chefs Louis Giraudon and Marcel Dorin revived the association and founded the "Confrérie de la Chaîne des Rôtisseurs". In Australia we have local ‘chapters’ or Bailliages in Victoria, South Australia, Western Australia, New South Wales and Queensland. In Queensland we have Bailliages on the Darling Downs, Gold Coast, Brisbane, Sunshine Coast and Cairns. One of the most distinctive feature of La Chaine de Rôtisseurs is that its membership is open to both professional and non-professional members. La Chaine Membership comes with range of benefits including fine dining events in the best local restaurants and hotels with menus created exclusively for our members, internationally recognised memberships; this means you are most welcome to attend a La Chaine function anywhere in the world, and plenty more.

NOSTALGIA MEETS MODERN CUISINE

Canberra Region members were treated to a memorable evening with a pub classics-meet-modern cuisine experience at the May Dinner Amical earlier this week.

The ‘La Cuisine du Pub Australien’ experience was designed by UCX, the innovative catering arm of the University of Canberra, which hosted the event on Tuesday evening, 26th May. UCX Group Executive Chef and local Maître Rôtisseur, Roulan Habi, created a five-course celebration of traditional Aussie pub classics, with paired Australian wines.

The Lime Poached King Prawn Cocktail, Barramundi & Chips, Bangers & Mash, Chicken Parmigiana and Lamington all received the Chef Roulan’s gastronomic interpretation, reimagining each dish with a unique touch alongside a sense of nostalgia.

Held in the University’s Bar X, the setting was complemented with entertainment from local musician , who belted out classic Australian songs and charmed the crowd with his music and unlimited stamina,

The service from the front of house team led by Dustin Mifflin was exceptional.

It was truly an experience to remember! Vive la Chaîne!

A fabulous weekend of food, wine and camaraderie for more than 20 Canberra Region members who joined our « Chaîne Bustronomy Tour » of the NSW South Coast.

⭐️Starting with a welcome dinner at Lincoln Downs Resort in Batemans Bay, the weekend kicked off with pre-dinner drinks before a curated dinner showcasing local products from the land. Members were shocked to realise that the stunning meal was prepared by Chef Dom Kevin who is only 25 years old.

⭐️Saturday morning, our bus picked us up for the short trip to the Oyster Shack on the Clyde River where we had the breakfast of champions (otherwise known as fresh oysters and Bloody Marys.) Back on the bus and we headed to the historic village of Mogo then on to Fox Dog Distillery and Brewery for charcuterie and pizzas, a guided tour of the plant and gin tasting (and some take-home self care packages.).

⭐️Saturday night was the main dinner at Trapper’s Restaurant (a hidden gem in a country motel) where the mayor of Eurobodalla Shire, Councillor Mathew Hatcher, spoke about the future development plans for the region. Chef Tim Stanton designed a menu based on local produce from the sea.

⭐️Sunday morning and we were back on the bus for a coastal drive that led us to the Tuross Boat Shed for a lunch of traditional fish and chips by the water. Onwards through idyllic paddocks and pastures to the historic village of Central Tilba where the Tilba Dairy had prepared delicious cheese tasting platters. After buying many kilos of cheese and other local food and crafts, it was time for the trip back to Batemans Bay where most people headed home.

⭐️About 12 hardy members stayed the distance for a final dinner at a local Thai Restaurant.
