These are “Petit-Choux”.
Little finger bites of awesomeness. We prepared 100 of them for a custom order last WE. We filled them with an original Lemon-Basil-Strawberry stuffing.

Story has it that the very first Petit Choux originate from the 16th century and were made with double baked “Panterelli dough”. You mihht be familiar with Profiteroles but there are limitless variations.

Stack them as a tower and you have the famous Croquembouche!

🎒 Le Petit Écolier: The Biscuit with a Timeless Secret!

This isn’t just any cookie—it’s a piece of French history that dates back to 1886 in the city of Nantes. It was created by the legendary bakery duo LU (named for Jean-Romain Lefèvre and his wife Pauline-Isabelle Utile). 

🍪 The Hidden Meaning: The base is the famous Petit Beurre  biscuit, which was designed as an “allegory for time.” Look closely at the edges:
* 52 “teeth” represent the 52 weeks of the year. 📅
* 4 “ears” at the corners represent the 4 seasons. ❄️🌱☀️🍂
* 24 tiny holes stand for the 24 hours in a day. ⏰

🍫 The iconic chocolate slab features an image of a schoolboy from 1897, modeled after the son of artist Firmin Bouisset. He wears a traditional French school uniform of the era and carries a basket, making him a symbol of childhood and nostalgic treats.
 
Whether you eat the chocolate first or the biscuit (we won’t judge!), come grab our homemade version of this classic and enjoy a century-old French tradition right here at The Blue Bears. It’s the ultimate “goûter” for kids and grown-ups alike!
