Community & Collaboration: We are first and foremost focused on promoting and meeting the needs of Southern oyster farms.

We are a 501 (c)(3) charitable organization, connecting communities and providing resources to support oyster farmers, cultivate thriving communities, promote healthy waters and celebrate good food in the southern United States. Mission: Oyster South is a 501 (c) (3) non-profit organization that connects communities and provides resources to foster the success of oyster farming in the Southern Uni

ted States. Vision: To spotlight and expand the environmental and economic benefits of oyster farming in the South, which will increase sustainable seafood production, improve the health of our waters, increase the prosperity of our coastal communities and elevate appreciation for Southern farm-raised oysters. But by being inclusive of all the industry’s multiple stakeholders, we can work together as a community. This lets us share information, pool knowledge and experiences and support and drive practical research that seeks creative solutions to challenges. Environmental & Cultural Conservation: We are committed to embracing, demonstrating and enhancing Southern oyster farming’s sustainable and environmentally friendly features. We are equally committed to honoring and protecting the oyster’s vibrant role in the region’s foodways and its water-working heritage.

Oysters build their shells from carbon pulled straight out of the water. They protect coastlines from storms. They clean the bays they grow in.
They take time to grow, and even more time to build reefs. But those reefs become places where other life gathers - fish, crabs, plants that depend on clear, healthy water.
In the South, oysters have always been part of both the land and the culture. Investing in them is slow, long-term work. And it pays off in stronger coastlines and more resilient communities.
As Earth Month comes to a close - eat more oysters. Support a Southern farmer. It’s good for the water too. 🌊🦪
