Darren "Hanno" Hannigan from Hanno’s Country Butcher (QLD) has taken out top honours in the Traditional Australian Sausage category at the AMIC National Awards, and it’s no surprise to those who know his work.

The traditional Aussie sausage is still the backbone of many butcher shops, and getting it right takes real skill. Texture, seasoning, consistency and flavour all have to come together, and Hanno nailed it.

A huge achievement that reflects years of dedication to the craft, commitment to quality, and pride in doing the simple things exceptionally well.
