✨ 🍄‍🟫 Our Monday Makers Market Spotlight this week is Appalachia Unveiled. Here’s what Bailey and Dan Smith, the owners behind the amazing mushrooms, would like you to know about who they are and what they do.

1: Who are you, and what is the mission behind Appalachia Unveiled?

We're Dan and Bailey Smith, we grow gourmet mushrooms to provide an oasis in our food desert. We love to try new and interesting foods and want to do the same for our community.

2: You grow some incredible varieties like Lion’s Mane and Yeti’s Breath, for someone who has only ever eaten a button mushroom from the grocery store, how would you describe the difference in flavor and experience?

The difference between gourmet and button mushrooms is huge. To compare it to meat, or other vegetables, there is a whole other category of food that is missing from our grocery stores! Textures and flavors in mushrooms are diverse, some options are like crab, and another like bacon.

3: Beyond fresh mushrooms, you offer grow kits and tinctures. What made you decide to move into the educational and wellness side of the mushroom world?

The grow kits we sell are no different than the ones we use! Many have asked to give it a try and we're happy to provide that for our customers. As for the tinctures, we use our Lion's Mane every day ourselves. If we're able to make it in large quantities why not share? It's been a life changing product for us and it may be for someone else too.

4: Appalachia has such a rich natural history with foraging and the outdoors. How does the local landscape and culture influence the way you run your business together?

We’re very proud to be from Appalachia and have spent many of our days looking for mushrooms and other things in our area. We were frustrated that we couldn't find anything fun to eat during the winter so we decided to try growing our own!

Fun fact about Dan: He's observed over 200 species of birds in Scioto county!

Fun fact about Bailey: I love painting, especially the birds Dan captures with his camera. It combines two of our favorite hobbies into one!

Okay, I am WAY behind on sharing decorated cookies… but these were far too special to stay buried in my camera roll. 🤍

Back in May, I had the honor of making these cookies for The Kitchen Collective’s Grand Opening & Block Party celebrating the opening of their new market storefront!

And if you aren’t familiar with The Kitchen Collective and what they’re doing for our community, you absolutely should be.

The Kitchen Collective is a shared commercial kitchen that gives local makers, bakers, cooks and food entrepreneurs a place to start, create, grow and turn an idea into an actual business. How COOL is that?!

Several of the partner products you see on our shelves at the bakery come from businesses that utilize The Kitchen Collective, so we get to see firsthand what can happen when someone is given the space and resources to take that next step. We’re incredibly thankful for their partnership and even more thankful to call them our neighbors.

Julie’s vision for our community is truly something special. She isn’t just creating a kitchen or a market — she’s cultivating this whole little community around food, homemade goods, small businesses and people cheering each other on. And you KNOW that is something I can get behind. 🥹

Small businesses helping small businesses grow. Local products on local shelves. People taking a chance on an idea and having somewhere to begin.

That’s the kind of stuff that makes a community better. 🤍

Congratulations again to The Kitchen Collective on this next chapter! We are so thankful you’re our neighbors, our partners and such a wonderful part of what’s happening right here in our little corner of Ohio.
