October is Farm to School month! In Kentucky, classes of students can sign up for the Farm to School Challenge for opportunities to taste, learn, and grow local food at school.

Kindergarteners at RW Combs Elementary were able to learn and grow with FoodCorps’ “Let Us Grow Lettuce!” lesson. Through participating in the lesson, students learned all about what plants need to live and grow, then planted microgreen seeds in reused milk cartons. Students are excited to watch their seeds continue to grow as little sprouts, and eventually try the greens with a yummy, homemade dressing. 🥬

This week, students at Robinson Elementary participated in a school-wide cafeteria taste test. 🍐⭐️

All students were able to try both pears and peaches, then use a sticker to vote on which they preferred. Despite students loving both, peaches won! The poster and results are displayed for the entire school community to see. Which fruit do you prefer?

It’s the first official day of fall, and we can’t get enough! 🍂🍎

So far this semester, FoodCorps classes across Kentucky have learned about the life cycle of a pumpkin (pictured here from 1st grade at East Perry Elementary), made and tasted applesauce, and used all 5 senses to try different varieties of apples through our Mindful Tasting lesson. Over the coming weeks, many classes of students are going to plant their cool weather crops, like spinach, carrots, and garlic. 🧄

It’s Member Monday! Today, we are introducing Mihia, a first year Food Educator with FoodChain in the Fayette County School District.

Mihia comes to FoodCorps with a background in landscape design and environmental education. This year, they are most excited to see how students react to trying new foods during their FoodCorps lessons! 🥕

It’s Member Monday! Today, we are reintroducing Sandra, a 2nd year Food Educator with Northfork Local Foods in Perry County.

Sandra has spent decades dedicated to gardening and environmental education. Throughout her career, Sandra has been a landscape gardener, certified permaculture designer, herbalist, retail nursery manager, Environmental Educator, and now a FoodCorps Food Educator. She has gardened and trained in California, Hawaii, Minnesota, and Kentucky. Sandra brings so much knowledge and joy into her classrooms, cafeteria, and garden space. She is excited to be back for another year, teaching lessons, leading gardening and Food Lab cooking club, and spending time in the cafeteria in the Hazard Independent Schools. 🥕

Buckhorn School lost their beautiful greenhouse and growing space in the 2022 flood. Now that they are settled back into their own, fully rebuilt school building, they are able to have a growing space again! Here are the raised beds that were assembled this week. We are so excited to see what students grow in them this fall in their FoodCorps classes! 🥕

It's Member Monday! Today, we are re-introducing Holly, a second year Food Educator with Northfork Local Foods in Perry County.

Holly is excited to continue teaching at two schools in her own community, helping students discover the joy of gardening and nutrition through hands-on lessons. One of her favorite things about the role is watching students try new foods and learn life skills that they can carry on with them for their entire lives. Outside of FoodCorps, Holly enjoys spending time with her family, camping, gardening, and canning. 🥕🥄🌿

It's Member Monday! Today, we are introducing Celia, a new Food Educator with Northfork Local Foods in Perry County.

Celia graduated with honors from the UNC at Chapel Hill with her B.A. in English and Comparative Literature. She has been working in professional childcare and educational settings since 2020 with children aged 0 to 17. In her free time, she loves rock climbing, mountain biking, reading, and baking with her family! This year, Celia is very excited to be back in the classroom, sharing the joy of community and yummy, local food with the kids! 👩‍🌾🦋🌿

Last week, our Food Educators spent some time in the garden learning best practices for growing with students. They planted seeds, mixed high quality soil, and even learned about how to create and use worm bins in their lessons as vermicompost. They are excited to bring all that they learned back to their own schools and classrooms this fall. 🌱🪱🪏

It's Member Monday! Today, we are introducing Marissa, one of our newest Food Educators with Northfork Local Foods in Perry County. She is pictured here alongside her dog, Rosie.

Marissa has a bachelor’s degree in Recreation Administration from WKU. After college, she became a camp professional where she worked at 3 different summer camps over the course of 8 years, teaching kids canoeing, team building, nature, and even archery. Marissa loves being outside and spending time with her family.

This year, she will be the Food Educator at East Perry Elementary and at Buckhorn. She shared that she is "un-be-leaf-ably excited to teach kids the amazing world of gardening and food nutrition". 🌱🍎👩🏻‍🌾
