Earlier this month, FoodCorps Kentucky joined with cohorts from across the country for a week of continued learning and reconnection to our work. We visited Atlanta schools with thriving garden and food education programs, learned from one another, alumni, and leaders in school food, and practiced applying new skills to our classroom and garden lessons. We are so excited to be back in our classrooms and communities to continue the work for the second half of the school year. 🥕

If you are interested in joining our cohort for the upcoming school year, apply here: foodcorps.org/apply

Some apples are tart. Others are sweet. All are delicious!

In November, students at Cardinal Valley Elementary school tasted 5 different varieties of apples, then wrote “property words” to describe each using their 5 senses. The next class, groups used the property words from one variety to write a poem, a skit, or a story describing all they observed. What variety of apple is your favorite?

FoodCorps Members across Kentucky are making the most of their final tomato harvests with pico de gallo! At Viper Elementary, students sharpened their knife skills by preparing the recipe in class, then comparing it to a store bought salsa with our “What’s in My Salsa?” lesson. At Cardinal Valley Elementary, students and families had the opportunity to try pico de gallo prepared with cherry tomatoes from the garden at Hispanic Heritage Night. 🍅🧅🍋‍🟩

You can find our recipe for pico de gallo in our FoodCorps Recipe book, https://foodcorps.org/wp-content/uploads/2025/08/FoodCorps-Recipe-Book-1.pdf. Let us know if you try it at home!
