National Eat Your Vegetables Day! We'4e not making that up. It's a real day!

There are so many things to consider when it comes to improving your life and having a balanced and healthy diet. You have a lot to think about when it comes to making the most of what you put in your body, and this is something that you need to make sure you get right. Join us during Fresh Food Box distribution on June 17 (Wednesday) and grab some extra fruits and veggies for an amazing price! We call it our Good Food Market!

YES! We have SC Grown peaches in this week's Richland County Fresh Food Box and that sweet sticky taste of summer has us doing a happy dance! Ordered boxes are available for pick up tomorrow! Our Culinary Medicine Kitchen will have samples of this smooth and creamy Banana Bread Butter during Wednesday's Fresh Food Box Distribution at our Richland County Hub. Ask for a sample when you come by!

Ingredients:
- 2 teaspoons unsalted butter plus ½ cup, at room temperature, divided
- 1 medium ripe banana, halved lengthwise and crosswise
- 1 Tablespoon brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ⅛ teaspoon ground nutmeg
- Whole-wheat bread slices, toasted, for serving (optional)

Instructions:
1. Put 2 teaspoons of butter in a pan and heat it on medium-low until melted.
2. Cut the bananas into quarters and place them in the pan with the cut sides down.
3. Sprinkle 1 tablespoon of brown sugar over the bananas.
4. Cook them for about 10 minutes, gently stirring so they don’t stick, and flip them once, until they’re soft and slightly browned.
5. Move the bananas (and any syrup in the pan) into a bowl.
6. Let them cool for about 5 minutes.
7. Add cinnamon, salt, nutmeg, and the remaining softened butter to the bowl.
8. Mash everything together until smooth.
9. Serve on toast if you like.

Congratulations to our Director of Programs and Rural Outreach, Ashley Page Bookhart for successfully completing the Riley Fellows DLI Program of The Riley Institute at Furman. Ashley is a member the Midlands Spring 2026 class and is joining the ranks of more than 3,000 statewide. As part of the program, Ashley worked on a team capstone project, Planting South Carolina Roots that will bring together an appreciation of South Carolina native plants and produce, education and local pride through the creation of a South Carolina native garden and seed library at the South Carolina State Museum.
