Easy Three-Bean Tacos 🌮🥑

Fresh, colourful and full of flavour, these simple tacos are perfect for a quick lunch or easy weeknight dinner.

Ingredients
6 soft tacos (or hard shells if preferred)
1 can three-bean mix, drained and rinsed
½ red onion, thinly sliced
2 tomatoes, diced
2 avocados, smashed
Juice of 1 lime
Salt and pepper, to taste

Optional
Handful of coriander, chopped
Cheese
Sour cream

Method
Prepare the beans, red onion and tomatoes.
To assemble, spoon the three-bean mix into each taco shell.
Top with red onion, diced tomato and smashed avocado.
Finish with a squeeze of lime juice and season with salt and pepper.
Add cheese, sour cream and coriander if desired.

Perfect for lunchboxes, entertaining, or an easy savoury snack 💚 These fluffy muffins are packed with spinach, creamy feta and bursts of semi-dried tomato 🍅

INGREDIENTS
🫒 Canola oil
🌾 375g self-raising flour
🥬 250g spinach, washed, dried and shredded
🧀 150g feta, crumbled
🍅 110g chopped semi-dried tomatoes
🧀 2 tbsp finely grated parmesan
🥛 330ml milk

METHOD
1️⃣ Preheat the oven to 200°C and lightly grease a 12-cup muffin tray with canola oil.
2️⃣ Sift the flour into a bowl, then add the spinach, feta, parmesan and semi-dried tomatoes. Stir to combine.
3️⃣ In a separate bowl, whisk together the milk, butter, egg and dill until well combined.
4️⃣ Add the wet mixture to the dry ingredients and stir gently until just combined.
5️⃣ Divide the mixture evenly into the muffin tray and top with extra parmesan 🧀
6️⃣ Bake for 20 minutes or until golden and cooked through.
7️⃣ Turn out onto a wire rack to cool slightly. Serve warm or enjoy later at room temperature ✨

Serving Tip: These are delicious fresh from the oven, but just as good packed for work or school lunches.

🥒✨ Golden Zucchini Fritters

Crispy on the outside, soft in the middle, and packed with cheesy goodness. These zucchini fritters are the perfect side dish, snack, or light lunch.

INGREDIENTS
🥒 5 medium zucchini, finely grated
🧂 Table salt
🥚 5 eggs
🧂 Pepper
🥄 3 heaped tbsp self-raising flour
🥄 2 heaped tbsp plain flour
🧀 5 tbsp finely grated pecorino romano, plus extra for sprinkling
🫒 Olive oil, for frying

METHOD
1️⃣ Place the grated zucchini in a bowl, sprinkle with salt, and leave for at least 10 minutes.
2️⃣ Squeeze out as much liquid as possible, handful by handful, then place into a clean bowl.
3️⃣ In a separate bowl, whisk the eggs, and season with salt and pepper.
4️⃣ Stir in both flours and the pecorino. Add to the zucchini and mix well.
5️⃣ Heat enough olive oil for shallow frying over medium heat.
6️⃣ Scoop heaped tablespoons of mixture into the pan
7️⃣ Fry for just over 1 minute per side, or until golden brown and cooked through.
8️⃣ Transfer to paper towel to drain excess oil and serve on a platter with an extra sprinkle of pecorino

Squeeze out as much water from the zucchini as possible
Keep fritters a similar size for even cooking
Olive oil or extra virgin olive oil both work well
Cook in batches so they fry evenly

Freshmark CEO Meegan George spoke with Channel 9 News on Friday about the growing pressure the fuel crisis is placing on the fresh produce supply chain.

“We are seeing growers forced into decisions not to send produce interstate, and early signs of reduced supply into Sydney. If this continues, consumers will feel it through higher prices and reduced availability within months or even weeks.”

“These are not future risks. This is happening now. As government considers how to support farmers and the agriculture sector through this crisis, it is absolutely crucial that the entire fresh produce supply chain is protected.”

Freshmark continues to advocate for urgent action to protect growers, wholesalers, transport operators and the reliable supply of fresh produce across the country.

🍐❄️ Frozen Pear & Ice Cream Delight 🍨
Cool, creamy, and just a little sweet — this is the ultimate easy dessert!

Ingredients:
• 2 pears, frozen overnight
• Your favourite vanilla (or any flavour) ice cream
• Treacle, agave, golden syrup, or syrup of choice

Method:
Scoop ice cream into a bowl.
Using a microplane, grate over the frozen pear — Simon Toohey usually adds about ⅓ of a pear per serving.
Drizzle with your chosen syrup.
✨ Enjoy immediately for a refreshing, indulgent treat!

Golden, flaky, and filled with sweet caramel goodness 🍐
These easy turnovers are the perfect mix of warm spices, buttery pastry, and soft, caramelised pear. Ideal for dessert or a cosy weekend treat ✨

Ingredients
• 2 medium pears
• ½ cup caramel sauce
• 2 sheets puff pastry, thawed
• ½ tsp ground cinnamon
• ½ tsp ground nutmeg
• 1 egg, whisked
• 1 tbsp brown sugar

Method
Preheat oven to 200°C.
Peel, core and dice pears. Mix with cinnamon, nutmeg and caramel sauce.
Cut each pastry sheet into 4 squares, then into triangles.
Add a spoonful of filling to one side, brush edges with water, fold and seal with a fork.
Brush with egg, sprinkle with brown sugar, and cut small slits on top.
Bake for 20–25 minutes until golden and crispy.
Serve warm with cream or ice cream for the ultimate indulgence 🍨✨

🥒Simple Dressed Cucumbers – a perfect starter or side for any Chinese meal for this Chinese New Year! 🐎🧧

Quick, fresh, and full of flavour – you can also sprinkle with chopped coriander or toasted sesame seeds for extra zing.

Ingredients:
2 Lebanese cucumbers
1 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp black vinegar
1 tsp sugar
2 garlic cloves, finely diced
1 tsp sesame oil
2 tbsp chilli oil (with flakes)

Method:
1️⃣ Cut cucumbers into 5cm x 2cm batons and remove most seeds. Optional: season with salt and refrigerate 30 mins to draw out moisture, then rinse.
2️⃣ Mix soy sauces, vinegar, sugar, garlic, sesame oil, and chilli oil. Pour over cucumbers, stir, and serve.

Fresh, spicy, and super simple! 🌶️
