Basil Tempeh Lentil Salad with Pumpkin 🌱

A tasty and filling dish with 40 grams of protein per serve. From our 7-day Wellbeing meal plan.

INGREDIENTS
- 150g/5.3oz tempeh (1 heaped cup, cubed)
- 35g/1.2oz (2 Tbsp) tamari sauce
- 10g/0.35oz (1 Tbsp) pine nuts
- 100g/3.5oz canned brown lentils (2/3 cup, rinsed & drained)
- 30g/1oz fresh sweet basil (1/2 cup, finely chopped)
- 100g/3.5oz cherry tomatoes (2/3 cup, halved)
- 100g/3.5oz butternut pumpkin (abt 1 cup, cubed)
- 150g/5.3oz kale (4 cups, roughly chopped)
- 1 lemon wedge, to serve

METHOD
1. Cut tempeh into cubes and marinate by placing in a shallow bowl and adding 1 tablespoon of tamari sauce. Mix and set aside.
2. Prep all veggies: cut pumpkin in bite size cubes, halve cherry tomatoes, destem and roughly chop kale, finely chop basil, and rinse and drain lentils.
3. Steam or boil the pumpkin for approx. 10 minutes until tender.
4. While the pumpkin is cooking, in a non-stick pan on a medium heat, add 1 tablespoon of water and the kale. Optional: season with some iodised salt. Cook for 3 to 4 mins or until wilted. Remove from pan and set aside.
5. Using the same pan on a low heat, toast the pine nuts until light brown and then add the lentils and basil. Sauté for 3 to 4 mins or until the lentils are heated through and fragrantly coated in the basil. Remove from the pan and set aside.
6. In the same pan on a medium heat cook the tempeh for approx. 5 to 7 minutes or until golden brown.
7. Assemble the salad by adding the kale, the basil lentils, pumpkin and tempeh to a bowl and topping with the cherry tomatoes. Drizzle with lemon juice and serve.

POPCORN TOFU BITES!

INGREDIENTS
400g extra firm tofu
3 Tbsp soy sauce
Aquafaba from 400ml can chickpeas
1/2 cup cornstarch
Vegetable oil for frying
▪️Crumb
1/2 cup cornflakes
1/2 cup nutritional yeast
1 tsp paprika
1 tsp garlic powder
1 tsp granulated onion
1 tsp thyme
1 tsp salt
1/4 tsp cracked pepper
▪️To serve
vegan sweet chilli mayo

METHOD
1. Press the tofu for 10 mins. You can do this by wrapping it in a clean non-fluffy tea towel (or paper towel) and placing a heavy object on top.
2. Combine all crumb ingredients into a food processor and pulse a couple of times (only a few seconds) until the mix is combined and the corn flakes have broken (but you still want it a little chunky). Transfer to a bowl.
3. Cube the tofu into bite size pieces, transfer into a bowl. Add soy sauce and stir to coat. Leave to soak for a few mins.
4. Place aquafaba and cornstarch into wide shallow bowls.
5. Coat tofu pieces in aquafaba and cornstarch, then the crumb.
6. Heat vegetable oil in a deep pot or dutch oven to 165C/325F. Carefully place tofu bites in oil, stirring occasionally until they are golden.
7. Drain bites on paper towel before seasoning with salt to taste. Serve immediately with sweet chilli mayo!

VEGAN GOLDEN SYRUP DUMPLINGS

A classic, warm, and deliciously rich dessert for a cosy trip down memory lane.

INGREDIENTS (Serves 4)

✴ Syrup
🌱3/4 cup brown sugar
🌱50 g vegan margarine
🌱1/3 cup golden syrup
🌱2 cup water

✴ Dumplings
🌱1.5 cup self raising flour
🌱pinch of salt
🌱3/4 cup soy milk
🌱50 g vegan margarine
🌱1 Tbsp golden syrup

METHOD

✴ Syrup
1. Combine all syrup ingredients into a large pot, bring to a simmer over low heat, stirring occasionally.

✴ Dumplings
1. Add flour, salt and margarine to a medium size mixing bowl. Gently rub with your fingertips until evenly combined.
2. Add soy milk and golden syrup and mix well until it forms a smooth batter.
3. Spoon dollops of batter into the syrup. The dumplings will swell as they cook. Allow to simmer for 10 minutes on one side, before gently flipping onto the other side. Use a large serving spoon to avoid breaking the dumplings when flipping. Continue to simmer for a further 10 minutes. Insert a skewer to check if thoroughly cooked.
4. Serve immediately with vegan vanilla ice cream.

GOLDEN POTATO ZUCCHINI FRITTATA 🌱

If you think you can’t make a classic, fluffy frittata without eggs - think again!

This vegan Potato & Zucchini Frittata is golden on the outside, soft and savoury on the inside. 😋 And, it's gluten-free.

Using simple pantry staples like chickpea flour, potatoes, silken tofu, and nutritional yeast, it creates a thick, savoury batter that bakes into a beautifully soft, satisfying dish.
