We traded the kitchen for the pasture as students from the MATC Culinary Arts Program joined us at Grassway Organics for a day of learning about grass only dairy farming!

With Chaz leading the way, students got a firsthand look at what goes into raising dairy cattle on pasture and the connection between healthy land, livestock, and the food on our plates.

Getting future chefs out onto farms and connecting them with the people who raise their ingredients is what these field trips are all about. Because knowing where your food comes from is one thing, but experiencing it firsthand is another!

A big thank you to Grassway Organics, the MATC instructors, and all the students who joined us for another great day of farm-to-table learning!

A friendly reminder that while the colors are changing and frosts are setting, alfalfa becomes risky to graze. When a hard frost hits your alfalfa, it freezes the fluid inside the plant and bursts the cell walls. This dumps a bunch of easily digestible proteins and sugars into the plant tissue. If livestock eat it, those rich nutrients whip up a thick foam in the rumen, trapping gas and causing serious bloat.

How to Handle It

· Give it 2 weeks: Wait about 14 days after a hard killing frost before turning livestock out onto alfalfa. That gives the stand enough time to dry down and lower its moisture content so it's far safer to graze.

· Look for wilting: The bloat danger drops off significantly once the plants start visibly drying up and wilting.

· Pull 'em off fast: If your stock is already out on alfalfa when a heavy frost hits, get them off the pasture immediately to prevent bloat.

Frost-damaged alfalfa isn't poisonous, but grazing it fresh after a freeze is a quick way to lose livestock if you aren't careful. Give the alfalfa time to dry out before introducing or continuing to graze alfalfa-rich pastures!

We are incredibly excited to congratulate Brattset Family Farm LLC Farm on being named a finalist for the 2026 Wisconsin Leopold Conservation Award!

This year’s winner will be revealed at the Wisconsin Board of Agriculture, Trade and Consumer Protection meeting on November 12 and will receive $10,000 courtesy of the Wisconsin Farm Bureau Federation and Dairy Farmers of Wisconsin.

This recognition is especially close to home for us at Glacierland, Brattset Family Farm LLC is operated by mother-daughter team Weenonah Brattset and Kirsten Jurcek, Glacierland’s Executive Director.

Since 2005, Weenonah, Kirsten and family have rotationally grazed beef cattle in Palmyra, integrating cropland back into perennial vegetation and continually working to improve soil health, water quality, biodiversity, and grassland bird habitat.

Their commitment to conservation reaches well beyond their own pastures. Through mentoring other graziers, partnering with organizations like the National Audubon Society, and sharing their farm as a place for education and learning, they continue to demonstrate what thoughtful land stewardship can look like in practice.

We’re proud to see Weenonah, Kirsten, and Brattset Family Farm LLC recognized for the work they’ve put into their land and community over the years.

PART 2!
With students heading back to school, families settling into fall routines, and (yes, already!) the holidays around the corner, now is a pretty good time to start thinking about filling a freezer.

A quarter or half beef, a box of locally raised meat, a farm gift card—or even splitting a bulk order with family—can be a pretty great gift. It feeds the people you love AND puts your dollars directly into farms in our communities.

And when you buy from local grazing farms, you’re supporting more than what’s on the dinner table. You’re supporting farmers, working lands, grazing systems, a stronger local food system and our natural resources.
