Seed to Plate Instructor Spotlight: Meet "Spicy Dan"!

If you’ve ever wondered who is behind the magic in our youth cooking classes, meet Dan Hayward! From fine dining manager to Peace Corps volunteer, and later a partner at Savory Spice, Dan has spent nearly 20 years cultivating a deep love for hospitality, community, and flavor.

After stepping back from day-to-day operations at Savory Spice to spend time with his young son, Dan brings his wealth of culinary and spice knowledge straight to our Seed to Plate students.

We caught up with Dan to ask him about his experience teaching the next generation of food leaders:

What’s your favorite part of cooking with kids? "Seeing them have those 'aha' moments when they connect our cooking techniques to what we're preparing – like the 5 flavors, knife safety, eating local, and building flavors."

What has surprised you the most? "How excited they get every week when I show up. That they're so enthused to learn more about cooking!"

What's something a student has said or done that stuck with you? "They all call me Spicy Dan, which is very cute. I'm a partner with Savory Spice, and they love some of the interesting spices I bring to class!"

What activities do the students love? "We like talking about the 5 flavors (sweet, sour, salty, bitter, and umami) for each recipe that we make. It helps them understand how to build or modify flavors during the cooking process."

Dan truly believes that learning to cook at an early age is paramount to a lifetime of enjoyment in the kitchen, and we couldn't agree more. Thank you, Spicy Dan, for bringing so much joy, and flavor to our community!

Growing Skills, Nourishing Lives: A Year of Impact with Sunny Bug Farmette

Just over a year ago, Sunny Bug Farmette gave Slow Food Denver an incredible donation to support our Seed to Plate program. We didn't realize then just how vital that support would become.

When 2025 threw us some unexpected curveballs, Sunny Bug’s flexibility allowed us to pivot, ensuring that our classes for students with learning disabilities at South High School and Northeast Early College remained fully funded. They didn't just give a donation; they gave our students a guarantee that their learning wouldn't be interrupted.

The Impact: From mastering knife skills to exploring new flavors, our students are gaining the independence they need to thrive. As a teacher at Northwest Early College shared:

"Our young adult students have gained valuable, real-world culinary skills... lessons align directly with our students' weekly Independent Living-Cooking course."

Thank you, Sunny Bug Farmette, for believing in the magic of the kitchen and the potential of every student. We are so honored to grow alongside you!

It’s officially the season of the "pie plant!" While its vibrant stalks are a hallmark of spring in Colorado, this perennial beauty is a bit of a local mystery. Is it a fruit? (Botannically, it's a vegetable!) Is it always red? (Not necessarily!)

At Slow Food Denver, we love rhubarb for its unapologetic tartness and its ability to thrive in our high-desert gardens.

The Rhubarb Rundown:
Color Story: Stalks range from deep red to bright green. While the red ones are often a bit sweeter, the green ones pack that signature zesty punch!
Texture: Think of it like a tart version of celery. For the best flavor, look for stalks that are firm and crisp to the touch.
Pro Tip: Never eat the leaves! They are poisonous to humans and pets, so trim them off immediately and stick to the stalks. Some gardeners use the leaves as mulch or compost.

How to Prep & Play:
Rhubarb is low in calories but high in fiber and Vitamin K. Because it’s so acidic, it loves a bit of balance.
The Sweet: Balance the tartness with honey, ginger, or the classic strawberry pairing in a crumble or jam.
The Savory: It’s not just for dessert! Rhubarb makes an incredible glaze for pork or chicken, and it adds a bright "pop" to fresh salsas.
The Simple: For a hit of nostalgia, try the old-school way: dip a raw, washed stalk straight into a bowl of sugar and take a bite!

How to Store: Keep your stalks unwashed and wrapped in the fridge – they’ll stay crisp for 1–2 weeks!
