❤️ **Volunteer With Us and Help Us Feed Our Community!** 🌱🥬

From planting a seed to harvesting fresh lettuce, from stocking shelves at the food pantry to running food out to cars and interacting with our neighbors, **every volunteer plays a part in making sure our community has access to food.**

Volunteers truly are the driving force behind everything we do. Without the people who show up, roll up their sleeves, give their time, and lead with compassion, we simply could not do this work.

And the beautiful thing is, there is a place for everyone to make a difference. Whether you love getting your hands dirty in the garden, organizing food, helping families shop at the pantry, or simply sharing a smile and a kind word with a neighbor, **your time matters.**

You don't have to give a whole day. Sometimes just a few hours of your time can make a difference in the lives of so many families.

**Because volunteering isn't just about the food we grow, harvest, or distribute. It's about the community we build, the dignity we provide, and the neighbors we uplift along the way.** ❤️

This week, Solid Rock served 669 families 30 more than last week.

That increase is not something we want to celebrate. It is a reminder that more families are turning to us as they struggle to keep up with the cost of living.

Behind every number is a neighbor. A parent trying to stretch a paycheck. A senior living on a fixed income. A family working hard and still coming up short.

We are grateful we can be here to provide food, dignity, and support. We are thankful for the volunteers, donors, and partners who make that possible. But as more families need support, the food and resources available must stretch further.

What will we celebrate? The day fewer families need our help because their wages and incomes keep pace with the cost of living. The day families can afford food, housing, and healthcare without deciding which basic need to skip or go without.

Until then, we will keep showing up for our neighbors and speaking honestly about what we see.

Because behind every number is a family who deserves to do more than get by. They deserve to thrive. 💛

We had lots of great produce at the pantry this week! 🥕🌶️ If you’re wondering what to make with those carrots, onions, and jalapeños you all got, here’s a fun recipe to try!

**Taquería-Style Pickled Jalapeños and Carrots**

Add them to tacos, sandwiches, or nachos for a little crunch and a kick! 😋

**Ingredients:**

• 2 medium carrots, peeled and sliced into thin rounds
• 8–10 jalapeños, sliced
• 1 small onion, sliced
• 4–6 garlic cloves, chopped
• 1 tablespoon olive or avocado oil
• 1½ cups white distilled vinegar
• 1 cup water
• 1 tablespoon kosher salt
• ½ tablespoon sugar, optional
• ½ teaspoon Mexican oregano
• ½ teaspoon cumin seeds
• 8–10 black peppercorns
• 1 bay leaf

**Let’s make it!**

1. Heat the oil in a saucepan. Cook the onion and garlic over medium heat for 3–4 minutes.
2. Stir in the oregano, cumin, and peppercorns for about a minute.
3. Add the carrots and jalapeños and cook for another 1–2 minutes.
4. Add the vinegar, water, salt, optional sugar, and bay leaf. Bring to a gentle boil, then simmer for 5–10 minutes, until the carrots are tender but still have a little crunch.
5. Let cool slightly, transfer to clean, heat-safe jars, and refrigerate promptly. These are refrigerator pickles—keep them refrigerated.

Leave the jalapeño seeds in if you like extra heat! Let everything sit in the fridge overnight for even more flavor.

Our Solid Rock Food Pantry is open this Monday 10/5 12-1 seniors only 55+ 1-2 open to public and Tue 10/6 2-6 at 3217 S Academy. No appointments or documents needed to get food. We will have lots of produce, bread, meats and non perishable.

Another year of being part of COSILoveYou CityServe Day, and we loved every minute of it! ❤️

We are grateful for the businesses and individuals who came out to Solid Rock Food Pantry to help get much-needed work done as we prepare for next week’s food distribution.

One of our favorite parts is getting to share the work we do and why it matters, while seeing our community come together to be part of it. Every helping hand makes a difference in getting our pantry ready to welcome and serve our neighbors.

Pasta, rice, and jelly are our most-needed pantry staples right now. If you’re able to donate, we would be grateful! ❤️

📍 Drop off donations at the back of the building at **3217 S. Academy**, at the two black double doors.

Donation drop-off hours:

• Monday: 9 a.m.–2 p.m.
• Tuesday: 9 a.m.–6 p.m.

This week we had an amazing group of soldiers come volunteer from U.S. Army Fort Carson
4th Division Sustainment Brigade, 4th Infantry Division. They were so helpful and such a joy to have we truly appreciate having them stop by and lend a hand giving our regular volunteers a break. We where told they enjoyed hanging out with the community so much they want to come once every month to volunteer.

“I’m working 60 hours a week, raising two children, and sometimes it still isn’t enough.”

For a single mom doing everything she can to provide, deciding between groceries and another bill is a heavy weight to carry.

Her experience is a reminder of why places like Solid Rock Food Center matter: having somewhere to turn means she can put food on the table and still pay that bill. Being welcomed with kindness and respect means she can ask for help without feeling ashamed. Having fresh produce to choose from means she can bring home nourishing food her children will enjoy.

As grocery costs stretch her budget, she needs the pantry more often than she used to. She is grateful we are here and we are grateful she trusts us enough to walk through our doors.

Behind every pantry visit is a person, a family, and a story we may never fully know. A parent trying to make ends meet. Children waiting for dinner. A neighbor who needs a little breathing room.

This is why we say food pantries are lifelines. ❤️
