I don't know if I found a pot of gold one off or if this is going to be forever but Pizzeria Dolorosa was at the amazing Sunday market at Cameron park. Did we finish the long John of a baguette by Wednesday? Why yes, yes we did.

Bread in this town is scant and rare gems. So when we find bagged beauty like this, I wanna scream it from the mountains.

Just a great bake through and though.

I hope to see it again next Sunday! Follow La Crosse Downtown to see what else is rockin.

So I made some chili crisp fettuccine again.

Growing up we have these amazing cabbage rolls that my great aunt would make. They were typically filled with ground beef and rice and cooked in a tomato base.

Well you know how I like to get adventurous so I had too many noods so I stuffed some cabbage with them and now I have a healthy portion size and a wrap of health to protect the innards.

You too can get weird. Just boil large leafs in some salt water to soften then wrap and either pan fry like these guys or stacking a pot

CABBAGE GARBAGE

Just because I can doesn't mean I should.

Ingredients:
• 1 large head of cabbage
• 1 pound fettuccine
• 4 tablespoons butter
• 3 cloves garlic minced
• 1 cups heavy cream
• 3/4 cups parmesan cheese
• Chili crisp 2 Tbsp and a drizzle for finish
• Black pepper 1-2 tsp
• Optional: any protein, mushrooms, green onion, crispy bacon, spinach

Directions:

1. Boil the cabbage
Core the cabbage and drop it into boiling water. Peel off softened leaves as they loosen. You want flexible leaves, not crunchy sadness.

2. Make the Alfredo
Cook butter and garlic until fragrant. Add heavy cream and let it simmer a few minutes. Add chili crisp and black pepper.

3. Pasta time
Cook the fettuccine and toss it in the sauce until every noodle is coated in spicy creamy glory. Stir in parmesan until smooth enough to make poor decisions with confidence.

4. Roll the garbage
Lay out cabbage leaves and stuff them with the chili crisp Alfredo noodles. Roll them up like little edible sleeping bags for exhausted carb lovers.

5. Bake or Pan sear with oil seam side down.
Place seam side down in a greased baking dish. Drizzle with extra chili crisp if you fear neither God nor consequences.

Bake at 375° for 25 to 30 minutes until bubbling and slightly crispy around the edges.

The result looks like something a medieval tavern would serve during a thunderstorm but tastes like creamy spicy comfort wrapped in buttery cabbage armor.

Also if you're not needing to be rid of a cabbage just make the noods and be done with it.

Shoot I went for a walk and fell right back into Flatiron Cafe & Bar . This as Bob Ross puts it, was a happy mistake. We tried lunch and it delivered onto us joy, flavors familiar and new. I loved Schuby's chicken specials on Fridays and I am pleased to report this chicken bacon ranch is all that it should be. It is the daily special so look out for more fun coming down the line. Thicc thighs and slabbed bacon make the whole affair my kind of sin.

Glad to have this addition to our lovely town.

Had a great time at a bachelor party this weekend. I'm not much of a farm gal but this place can convince me.

I made some steaks with chimichurri, I think most of us bought enough for everyone for the weekend. So we had a too much food problem. (My favorite kind)

I love cooking with people and for people.

It had been quite a while since we were all under the same roof so having good food and company was a real treat.

I am pretty jacked to see Flatiron Cafe & Bar (321 State St, La Crosse, WI 54601) opening with such great success. Know that at the start of any venture there will be kinks, with this one I was surprised how smooth the process was.

I went for a bday of one of my buddies. Thought it was quite nice to happen on opening day.

For starters we got the fries and the beef tare tare.

I got the schnitzel, and my partner got the chicken keiv.

We got a surprise Tagliolini it was
butter, black truffle, parmesan reggiano. This brought me back to buttered noodles but so much better. Velvety buttery greatness.
