Turkish Coffee Fortune Readings
Students will learn how to make traditional Turkish coffee and how to interpret the patterns and images from the leftover coffee grounds in the cup to tell their fortune. This is a rich custom that is still practiced in Turkiye today. The course fee will cover a Turkish coffee cup and saucer, a small pack of Turkish coffee, and a cezve (long-handled copper Turkish coffee pot) for each student to take home.

A How-to on Tofu

Learn about the different types of tofu commonly available in grocery stores and the ways in which tofu is similar to, and different from, its other soy food cousins (tempeh, soy milk, soy curls, TVP, and edamame). You will make marinades and dressings to add flavor and work with the tofu in different ways to change its texture. Along the way, you'll prepare some veggies and a couple of quick cooking grains, so that by the end of class you will have the building blocks of a meatless mix-and-match meal.
