Alaska ProStart Students also have the opportunity to participate in paid internships where industry managers mentor them.

More than culinary education...ProStart connects students to the future of Alaska hospitality through workforce development, industry partnerships, hands-on learning, and real-world career exploration, all supported by a nationally recognized curriculum. The ProStart® program, administered by the National Restaurant Association Educational Foundation (NRAEF) and Alaska CHARR, is a two-year curricu

lum designed to teach high school students the management skills needed for a career in the restaurant and foodservice industry. When students meet academic standards, complete a checklist of competencies, and participate in at least 400 hours of a mentored work experience, they are awarded the ProStart National Certificate of Achievement that signifies they are well qualified to enter the industry workforce. A ProStart® college prep program accomplishes the following:

• Increases industry involvement through mentors and sponsors
• Strengthens educator-industry partnerships
• Attracts quality students to hospitality industry careers
• Allows students to participate in relevant work experiences while meeting the needs of the industry

Last year's Alaska ProStart theme was Mushrooms. Our educators encountered lessons about cooking with them, students heard from mycologists, we learned how to spore varietals and create flavor profiles around this delightful umami ingredient. Students heard about careers involving food sciences and we shared our Bootcamps with biology students to encourage cross discipline studies. Students were challenged to feature the theme in their competition dishes to help Alaskan ingredients shine while developing a better grasp on working with local resources, seasonal ingredients, and honing our state's flavor profile identity.

TEAM ALASKA is headed to Baltimore!

Our ProStart students have earned the honor of representing Alaska at the National ProStart Invitational this April — competing against top culinary and management teams from across the country.

Now it’s our community’s turn to step in.

Travel from Alaska to the East Coast is no small journey, and we’re asking our hospitality family and friends to help send these students to Nationals.
