I hear about books and causes all the time, and this one really spoke to me. The latest book, which is a true celebrity cookbook with family recipes, is one I think everyone will enjoy. Jude Children's Research Hospital is all the more reason people should find it. As parents, we sometimes want to give to causes like these but we forget to follow through. This cookbook with recipes from Jennifer Aniston, Betty White, Jay Leno and Mario Lopez, among others is something that families will enjoy. There are family breakfast ideas, lunches, family dinners and desserts along with little stories from the celebrities on why they liked it or which family member first made it for them. What an incredible day speaking at the United Nations yesterday at the made_impact Summit.

To share the Nick Katsoris Loukoumi Make A Difference Foundation’s story at the UN was truly a full circle moment - from a journey that started 22 years ago with a book about a lamb named “Loukoumi” that travels around the world, meets friends and does good deeds to now be speaking at the UN about global education and cultural exchange.

The Loukoumi Foundation’s mission is rooted in empowering young people to make a difference — now inspiring over 150,000 children from 30 countries to lead with kindness, compassion, service, and the belief that each of us has the power to create positive change in our communities and our world through causes that we are passionate about.

The Summit brought together changemakers, leaders, and visionaries who are committed to creating meaningful social impact and building a more equitable, sustainable, and peaceful world.

I was especially honored to serve on a panel focused on Global Education and Exchange, where I had the opportunity to ratify something I deeply believe - Made Impact’s mission - and that is that: International exchange and education are the world’s best long-term strategy for achieving human potential, prosperity, and peace.

Thank you to Chris Arnold abedin and everyone at Made Impact and for creating a platform where these important conversations can happen and I applaud and support your goal of collecting one million stories, and to all the speakers that inspired us all day.

And a very special, heartfelt thank you to Alexandra Akira for believing in the Loukoumi mission and for inviting me to be part of this extraordinary experience. Your belief in what we are building means more than words can say.

I leave the UN even more inspired to continue the work of empowering young people to make a difference — one good deed, one connection, and one story at a time.

🌟 Children don’t lack the heart to do good—they lack the opportunity.

In the Loukoumi Foundation Research Study, published by Fordham Global Outreach! over 1,000 students were asked what stands in the way of engaging in community service and philanthropic projects, and their response is overwhelmingly clear with a majority citing: “Lack of Opportunity.”

Young people possess an incredible amount of empathy, enthusiasm, and a genuine desire to make a difference. But without accessible programs, structured guidance, and open doors, that potential often goes untapped.

At The Loukoumi Make A Difference Foundation, our mission is to break down that barrier by providing children with the platforms, projects, and encouragement they need to turn good intentions into meaningful action.

When we empower youth to give back, we aren’t just helping communities today—we’re nurturing the compassionate leaders of tomorrow.

🇨🇴❤️ PUERTO RICO AND Nick Katsoris STAND WITH COLOMBIA ❤️🇵🇷 In the wake of the devastating earthquake that struck Colombia, our Loukoumi Good Deed Council from the Academia de la Inmaculada Concepción in Mayagüez, Puerto Rico is leading the way alongside Apostolinas Colombia Apostolinas en Colombia to help families and communities who have been affected.

This is more than a donation drive. It is an opportunity for our students and our community to come together and put compassion, faith, and service into action.

Apostolinas Colombia is a Catholic religious community committed to serving those in need. Through their pastoral and social work, they are helping bring support, hope, and solidarity to communities affected by this tragedy. For more on their work please visit: https://www.apostolinascolombia.org/

The Nick Katsoris was proud to present our Make A Difference Award in May to the FrDemetrios Balidis Loukoumi Good Deed Council as the inaugural Loukoumi Greek Orthodox Archdiocese of America Good Deed Council. The Holy Trinity group is also leading the way to fundraise for a dedicated Loukoumi lounge at the new St. Michael’s Home for the Aged, where children and young adults can visit with the residents. Congratulations to these exemplary students. 🍀 Derry, Northern Ireland, here we come! ✨ The Loukoumi Make A Difference Foundation’s 2027 Good Deed Summit is heading to the Emerald Isle!

Our journey will begin in Dublin, where we’ll kick off our adventure aboard the Loukoumi Good Deed Bus as we travel across Ireland, spreading kindness and making a difference along the way. We’ll make a special stop in Belfast before arriving in Derry, Northern Ireland, where we’ll gather for four inspiring days of service, friendship, and leadership.

We’re honored to partner with our host school, St. Joseph’s Boys’ School in Derry St Joseph's Boys School Derry and can’t wait to welcome students, educators, and changemakers from around the world.

🗓 Summit Dates: April 13–18, 2027
