This summer, inspire your child to cook, move, and eat well at the 1440 Nourishing Generations Young Chef Academy! ⁠

This hands-on July program for ages 7–13 blends farm-to-fork cooking, nutrition education, movement, and shared meals in the 1440 Teaching Kitchen and Joanie’s Garden. Led by local nonprofit Nourishing Generations educators, along with 1440 Culinary Arts Education faculty Chef Ryan Fillhardt, kids will build confidence and healthy habits that last a lifetime.⁠

Today, 1440 Multiversity celebrates nine years of creating hope for living well. Since opening in 2017, we’ve welcomed more than 120,000 guests from over 50 countries to our 75-acre retreat center in the redwoods, served alongside local organizations through thousands of hours of community-building efforts, and held space for learning, healing, and meaningful connection. Every guest, team member, faculty partner, and community member has helped shape this journey and bring the mission of creating hope for the living well come to life. Rickie Byars, a beloved singer-songwriter and 1440 Adjunct Faculty member, has been a guiding voice since the very beginning. She and her choir offered the keynote performance at the opening of campus, sharing a powerful expression of devotion, gratitude, and connection. In June, she returns to the redwoods for the RIGASA Summer Revival: A Love Well Weekend of Music, Joy & Community. She reflects on how this space believed in her and her voice, further fueling her inspiration in her work.⁠

Rickie is deeply inspired by emotion and the opening of the heart, believing that true devotion grows from that place. She values lifelong learning, especially in love and God, trusting that the more we open, the more love we receive in return. While every space holds meaning, Kitchen Table at 1440 is especially close to her heart; a place of stories, memories, and community.⁠

Through her music and teaching, she reminds us of the importance of living with an open heart and sharing love.

This garlic confit is a seasonal kitchen staple rooted in the idea that food is medicine; simple, intentional ingredients come together to nourish, restore, and bring depth to everyday cooking. As the garlic slowly infuses with herbs and olive oil, it becomes more than a recipe; it’s a reminder to slow down and care for yourself through what you create in the kitchen to Live Well.

Ingredients:
6 Heads Garlic (or 2 Cups Garlic Cloves), peeled and root ends cut
6 Fresh Thyme Sprigs
3 Fresh Bay Leaves
3 Chile de Árbol Pods
2 Cups Extra Virgin Olive Oil

Instructions:
1. Peel 6 heads of garlic (or 2 cups garlic cloves) and trim off the root ends.
2. In a medium saucepan, combine the garlic, 6 fresh thyme sprigs, 3 fresh bay leaves, 3 chile de árbol pods, and 2 cups extra-virgin olive oil.
3. Heat the mixture over medium-high heat until it comes to a gentle boil.
4. Boil the oil on the stove for 30 seconds to 1 minute, then turn off the heat.
5. Set the saucepan aside and allow the oil to cool completely to room temperature.
6. Once cooled, use a slotted spoon to transfer the garlic, herbs, and chiles into clean canning jars.
7. Pour the infused olive oil over the solids, ensuring the garlic is fully submerged.
8. Seal the jars and refrigerate for up to one month.

One of the hearts of 1440 is Pete Delfino, our Procurement Manager. For the past eight years, he has been an integral part of the 1440 community.⁠

Pete’s favorite part about working here is that there is always something new and exciting. He values the opportunity to work closely with local organic farms, building meaningful relationships and supporting the farming community he has spent most of his life in. His favorite signature class is Stick Tai Chi, where movement and mindfulness come together in a thoughtful, embodied practice. His favorite place on campus is the Mother Tree, a space that reflects the deep connection between nature and 1440, bringing together nature, community, and a shared sense of inspiration and learning.

Outside of campus, Pete enjoys horseback riding along the trails of Big Sur, immersed in the natural beauty of the coast. Lately, he’s been exploring cooking, learning new recipes, and finding joy in trying something new in the kitchen.
