As non-alcoholic offerings expand, much of the discussion around microbial stability focuses on the beverage itself.

Serving these products on draft adds another layer: an open dispensing system influenced by exposed surfaces, cleaning practices, and product turnover. In this study, liquid samples from the non-alcoholic b**r and hop water generally met the study’s quality criteria, while the nozzle surfaces showed greater variability.

The results also did not consistently correspond with time since cleaning, and differences in tap usage may have contributed to what was observed. I think this work raises useful questions about what we are monitoring when we evaluate draft-system hygiene and whether sampling the product, the line, or the dispensing surfaces tells us the same thing. Although the findings are specific to one brewery, they provide a useful starting point for considering how non-alcoholic products are managed at the point of service.

In a new Technical Quarterly article, "Influence of Malt Diastatic Power and Cocktail Enzymes on Properties of Extract Recovery from Sorghum Wort," authors O. C. Amadi, A. N. Moneke, B. N. Okolo, and R. C. Agu explore how enzyme selection impacts mashing performance.

Discover how switching from complex enzyme cocktails to lower diastatic power malt and single-enzyme combinations can significantly increase sorghum wort extract recovery, boost filtration speeds, and cut production costs for brewers.

"As a brewer, you ultimately want hops to be available when you need them and to perform the way you expect them to. That gets harder when growers are dealing with increasing pressure on water, inputs, and growing conditions.

This new MBAA Technical Quarterly article looks at why sustainable hop production matters from the brewer’s side of the supply chain and how more resilient growing practices and stronger supplier relationships can help protect hop quality, consistency, and availability over time."
