🍰 Technique Tuesday!🧑🏾‍🍳👩🏻‍🍳

Today, we are highlighting one of the most important skills in baking: measuring ingredients accurately!

Our Spring 2026 cohort had the opportunity to learn from Chef Brandon of Wharf 38 in Deale, MD while making delicate soufflés and light, airy sponge cakes. Baking is a science, and even a small measuring mistake can change the final product. Through hands-on practice, our students discovered that precision, patience, and attention to detail are just as important in the kitchen as they are in the workplace.

💡 Kitchen Tip: When measuring flour, avoid scooping directly with the measuring cup. Instead, fluff the flour with a spoon, gently spoon it into the cup, and level it off with a straight edge. This helps prevent packing the flour, which can lead to dense cakes and baked goods!

At The Culinary Program, every recipe is an opportunity to build confidence, develop job-ready skills, and create something delicious along the way. We’re so grateful to Chef Brandon for sharing his expertise and helping our students grow as aspiring culinary professionals!

We’re proud to celebrate Culinary Program alum Corrie, who is now working at Wharf 38!

Corrie’s journey reflects growth, confidence, and perseverance. Through the program, she built essential culinary and workplace skills - like knife safety, food safety, teamwork, and communication - while gaining the confidence to step into the workforce.

She shares, “This program gave me hope, a chance to grow, learn skills, socialize, and have loving and caring teachers that have your back all the way to find a place where you belong.”

Today, Corrie is putting those skills into action in her new role at Wharf 38, continuing to build her independence and career path. We are incredibly proud of all she has accomplished and the determination she continues to show!

Alumni Spotlight: Spencer Flach

We are excited to highlight Spencer, a proud graduate of our Culinary Program, who continues to inspire us with his journey and growth since graduation.

Spencer shared that he is most proud of proving to himself that he is capable of learning new skills and turning a hobby into a meaningful career. Through the program, he gained not only valuable professional skills, but also increased confidence that has carried into both his work and personal life.

When reflecting on his experience, Spencer described the program as “a key that unlocked many doors.” One of his favorite parts is that even after graduation, the program remains a continued source of support and connection.

Since completing the program this spring, Spencer is now officially employed at Dash In and has embraced new opportunities in a field he truly enjoys. He credits the experience with helping shape both his career path and personal development.

We are so proud of Spencer and excited to see all that he continues to accomplish!
