Minted Pea and Lemon Fritters with Vegan Tzatziki ...

Ingredients:
- 2 cups frozen peas, thawed
- ½ cup chickpea flour (or all-purpose flour)
- ¼ cup finely chopped fresh mint
- Zest of 1 lemon
- 1 clove garlic, minced
- ½ teaspoon ground cumin
- ½ teaspoon salt, plus more to taste
- ¼ teaspoon black pepper
- 2 tablespoons plain dairy-free yogurt (or regular yogurt)
- 2 tablespoons unsweetened plant-based milk (or regular milk)
- 2 tablespoons olive oil, for pan-frying For the Vegan Tzatziki:
- ¾ cup unsweetened plant-based yogurt (e.g., coconut, almond, or soy)
- ¼ cucumber, grated and excess liquid squeezed out
- 1 tablespoon chopped fresh dill
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper, to taste.
Directions:
🌱 Prep pea mixture
🌱 In a food processor or blender, pulse the thawed peas until coarsely mashed, leaving some texture.
🌱Transfer mixture to a bowl and stir in chickpea flour, chopped mint, lemon zest, minced garlic, cumin, salt, pepper, yogurt, and plant-based milk.
🌱 Mix until well combined and holds together when pressed. If too wet, add a little more flour.
Form fritters:
🌱 Shape mixture into 8 small patties (about 2½ inches / 6 cm diameter). Set aside.
Cook fritters:
🌱 Heat olive oil in a large nonstick skillet over medium heat.
🌱 Add fritters in batches without crowding. Cook until golden brown, about 3-4 minutes per side.
🌱 Adjust heat as necessary to avoid burning.
🌱 Transfer cooked fritters to a plate lined with paper towels to drain.
Make vegan tzatziki:
🌱 In a small bowl, combine plant-based yogurt, grated cucumber, dill, garlic, lemon juice, and a pinch of salt and pepper. Stir until smooth and well mixed. Taste and adjust seasoning as needed.
