🐷 PORK CHOPS, APPLESAUCE & CHILDHOOD SURVIVAL! 😂

Anybody remember when Mom cooked pork chops until they were roughly the same consistency as a leather work boot?

There was a reason applesauce was always served with pork chops back then. It wasn’t a fancy culinary pairing. It was necessary to get the darn things down! 🤣

And gravy? Gravy wasn’t optional. It was a rescue operation.

Now, in Mom’s defense, back then they were convinced pork had to be cooked until there wasn’t a living organism left in a three-mile radius. And they certainly weren’t taking any chances!

Well, tonight…at VFW Post 1873, we’re giving pork a second chance!

🍽️ FRIDAY NIGHT SUPPER — OCTOBER 30

🐷 Hopefully tender pork bites (we’re trying to break a generational curse here) simmered in rich, savory pork gravy, served over a generous helping of mashed potatoes.

🐷🍴 THE WEEKEND IS ALMOST HERE… AND THERE’S PORK ON YOUR FORK!

If that cow got your attention Monday, just wait until you see what’s coming out of our kitchen! 😂

🍽️ FRIDAY, OCTOBER 30 — SUPPER!

We’re putting tender pork bites in rich, creamy country pork gravy and ladling the whole delicious mess over homemade mashed potatoes!

Add seasoned green beans, a full build-your-own salad bar, and homemade apple crisp for dessert, and you’ve got yourself a proper old-fashioned supper!

🥞 SUNDAY, NOVEMBER 1 — BREAKFAST!

And we’re not putting the pork away just yet!

We’re serving up a slice of ham alongside scrambled eggs and a stack of hot, fluffy pancakes!

🇺🇸 REMEMBERING OUR “WHY.”

With the Marine Corps’ 251st Birthday and Veterans Day approaching, perhaps this is a good time to ask ourselves a question.

Why do we choose to volunteer?

For some, it’s because they served. For others, it’s a parent, a spouse, a child, or a friend who wore the uniform. And for many, it’s simply a deep appreciation for sacrifices they’ll never fully understand.

The missed birthdays. The holidays spent far from home. The families waiting and worrying. The friends who never returned. The wounds, both visible and invisible, that some carry for a lifetime.

These are the people who gave us our “WHY.”

We can’t give them back the years they missed or undo what they’ve endured. But we can give something of ourselves.

An afternoon in the kitchen. A few hours planning an event. Washing dishes, setting tables, or offering a friendly face and a place to belong.

Small things, perhaps. But when they’re done with gratitude and genuine purpose, they mean something.

Because “thank you for your service” should sometimes be followed by service of our own.

Volunteering takes time, patience, and a willingness to give without expecting anything in return. We should take pride in what we accomplish. But there’s a difference between being proud to serve and making service about ourselves.

The veterans who walk through our doors have already sacrificed enough. They deserve a place where gratitude comes before recognition, and the desire to serve matters more than the desire to be seen.

That’s why remembering our “WHY” matters.

Because the true measure of our contribution isn’t what we’ve done for the organization. It’s what the organization, through our efforts, has been able to do for others.

The people we honor served something bigger than themselves. And perhaps the greatest way we can honor that example is by doing the same.

As we recognize Veterans Day on November 11 and prepare to celebrate the Marine Corps Birthday at VFW Post 1873 on November 13, let’s remember that gratitude isn’t measured by how loudly we express it.

It’s measured by what we’re willing to give.

And the next time we find ourselves questioning our purpose, perhaps the answer is simpler than we think.

Look past the meetings, the titles, and the everyday responsibilities.

Look at the veteran walking through the door.

There’s your “WHY.” 🇺🇸

🍂 NOVEMBER’S LOOKING PRETTY FULL… AND WE HAVEN’T EVEN SET THE TABLE YET! 🍽️

The November calendar is ready, and we’ve got a little bit of everything happening at VFW Post 1873!

Good food, good company, a few celebrations, and something we’re especially excited about putting together.

🥞 SUNDAY BREAKFASTS! We’re mixing things up with stacked pancakes, Ed’s homemade biscuits and sausage gravy, and a hearty kielbasa breakfast.

🍔 FRIDAY NIGHT SUPPERS! November 6 brings cheeseburgers and fries, with a regular or double-double option. Because sometimes one burger just isn’t enough. 😉

🇺🇸 NOVEMBER 7 — POST & AUXILIARY MEETINGS! Auxiliary at 10 AM, Post Members at noon.

🦅 NOVEMBER 13 — MARINE CORPS BIRTHDAY BBQ! We’re celebrating 251 years of Marine Corps history! More details coming.

And then there’s something a little different…

🦃🍁 FRIENDSGIVING — SATURDAY, NOVEMBER 21!

FROM OUR FAMILY TABLE TO YOURS.

We’re putting together a community Thanksgiving supper, and we want YOU to be part of it!

But we’re not just looking for another casserole on the table.

We’re looking for the stories that come with it.

Maybe it’s Grandma’s recipe, the dish your family insists on every Thanksgiving, or something you’ve been making for 30 years without ever measuring a single ingredient.

You know the ones. The recipes that somehow taste like home.

BRING A DISH. SHARE THE STORY.

And we’re going to give those stories a little spotlight of their own!

Every dish has a story, and we want to hear yours. We’ll be making little story cards to display alongside the dishes, featuring the name of the person who brought it and a bit of the history behind the recipe.

So while you’re filling your plate, you might discover that the stuffing you’re about to try was someone’s grandmother’s specialty, or that a certain casserole has been showing up at the same family Thanksgiving table for 40 years.

Because sometimes the best part of a recipe isn’t what’s in it. It’s the memories that come with it. ❤️

And here’s where it gets interesting!

With your permission, we’d love to share some of those family recipes, the people behind them, and their stories in the next edition of The Canteen Chronicles AND right here on our page!

Your family’s favorite might just become someone else’s new tradition. ❤️

We’ve got a busy little week cooking at VFW Post 1873, and apparently the pigs have taken over the weekend menu! 😂

It’s the DALLAS COWBOYS vs. PHILADELPHIA EAGLES!

Two longtime NFC East rivals, both hungry for a win, and a whole lot more than bragging rights on the line!

Whether you’re cheering for the Cowboys, rooting for the Eagles, or just hoping somebody loses… this ought to be entertaining! 😂

We’re going straight for the comfort food this week!

Tender, seasoned pork bites smothered in rich, creamy country pork gravy, served over a generous helping of buttery homemade mashed potatoes, with a side of old-fashioned seasoned green beans.

The kind of supper where the mashed potatoes aren’t just a side dish. They’re a perfectly good excuse to eat more gravy.

And we fully support that decision. 😂

You folks certainly seemed to enjoy having a little creative freedom with your greens last Friday, so we’re bringing it back!

We’ve been finding our groove these past couple of Sundays, trying a few things, making adjustments, and figuring out what works.

And we’ll admit, we might’ve been a little light-handed with those first couple of breakfasts.

Well, consider us properly warmed up! 😏

This Sunday, we’re bringing out the good old-fashioned breakfast favorites!

🥞 Hot, fluffy pancakes — STACKED HIGH!

And when we say a stack, we mean a STACK!

Two pancakes? Sure, if that’s what you want.

Want a few more? Don’t be shy. We’re not in the business of guarding the pancake batter! 😂

Because ham deserves a proper place on the breakfast plate, pancakes are meant to be stacked, and Sunday mornings were made for a breakfast worth getting out of bed for!

🇺🇸 HEY, PARENTS, GRANDPARENTS & TEACHERS! THIS ONE’S FOR OUR KIDS! 🎓

The Veterans of Foreign Wars is offering students across America the chance to turn their thoughts, experiences, and appreciation for our nation’s veterans into something pretty remarkable.

Scholarships, cash awards, and national recognition!

And we’d love to see some of our own local students get involved!

🇺🇸 TWO CONTESTS. ONE POWERFUL THEME.

“What a Veteran Taught Me About America.”

✏️ PATRIOT’S PEN — GRADES 6–8

Middle school students are invited to write a 300–400 word essay exploring this year’s theme.

🏆 National First-Place Award: $5,000

🎙️ VOICE OF DEMOCRACY — GRADES 9–12

High school students can put their writing AND their voices to work by creating an original 3–5 minute audio essay.

🏆 National First-Place Scholarship: $35,000

And those are just the top awards! Opportunities for recognition and prizes extend through the local, district, state, and national levels.

Our veterans have stories to tell. Lessons learned, sacrifices made, and experiences that helped shape their understanding of America.

And sometimes, all it takes is a conversation between generations to leave a lasting impression.

Maybe your student has a veteran in the family. Maybe it’s a neighbor, a teacher, or someone they’ve gotten to know in our community.

What did that veteran teach them?

That’s a story worth telling.

🍝 WE MADE MORE. YOU ATE MORE. WE STILL RAN OUT! 😂🇮🇹

Well, VFW Post 1873… you did it again!

We thought we were ahead of the game Friday night. We made MORE spaghetti than originally planned, had a big pot of hearty, slow-simmered meat sauce, and figured we were pretty well prepared.

Yeah… about that. 🤌🏼😂

Not only did folks come hungry, they came back for seconds! Some finished their dinners and decided they needed another plate to take home. Others came through the door specifically looking for takeout.

And before the evening was over?

SOLD OUT. AGAIN!

But here’s our favorite part…

Not ONE plate came back into the kitchen with food left on it. Not one! Do you have any idea how easy that makes cleanup? 😂

We even dressed up the tables with linen napkins, just for the fun of it. A little Italian flair, a whole lot of conversation, laughter, and people simply enjoying a Friday night together.

And THAT is exactly what we’re trying to bring back.

We want it to feel a little like walking into Grandma’s house. Supper’s on, the conversation’s flowing, and somebody’s already telling you to pull up a chair. Nothing fancy. Just that warm, familiar feeling of being right where you belong.

🇮🇹 And another big thank-you to our friends at Cali Produce Market - Hectors When a local business helps us put supper on the table, we want them to know how much we appreciate it. Another sold-out night, and another reminder of what makes this little community so special!

🍝🇮🇹 SONO AFFAMATO! 🤌🏼

If that’s the only Italian you know tonight, then you’re pretty much covered at the VFW. 😂

I’M SURE YOU’VE HEARD…

The sauce is saucin’, and Friday Night Supper at VFW Post 1873 is coming in HOT!

Thick, meaty, a little saucy, and packed with plenty of bada bing, bada boom! 🤌🏼

What’s that mean?

We’re talking ground beef, mild Italian sausage, onions, garlic, rich tomato sauce, and a whole lot of Italian goodness. The kind of meat sauce that doesn’t just sit politely on top of your spaghetti. Oh, no. It means business.

And there’s enough flavor in there to make that garlic bread work overtime!

Are we saying Nonna would approve?

We’re not making any promises. But we’d certainly invite her to dinner. 🇮🇹😉

Sharing the spotlight tonight is a fresh, build-your-own salad bar with a colorful assortment of vegetables, toppings, and dressings. Because everybody has their own idea of what belongs in a perfect salad, and we’re not about to start that argument!

AND FOR DESSERT? 🍫

Chocolate cake with almond-kissed cream cheese frosting, finished with a sprinkling of chocolate bits.

Because apparently, a big spaghetti dinner just wasn’t enough. 😂

🍝 THAT’S AMORE… AND MEAT SAUCE! 🇮🇹

A Saucy Little Friday Night at VFW Post 1873!

There’s spaghetti night. And then there’s OUR kind of spaghetti night.

Around here, we don’t believe in simply heating up a jar of sauce, dumping it over some noodles, and calling it supper.

Oh, …no…..We have other plans. 😏

Remember what we did to those Sloppy Joes last Friday? Well, spaghetti is getting the same treatment.

We’re building a big, hearty meat sauce with ground beef, mild Italian sausage, onions, of course garlic and plenty of seasoning, then letting the whole thing simmer low and slow until it’s rich, thick, wonderfully saucy, and packed with flavor.

The kind of meat sauce that actually sticks to your spaghetti. One you need a piece of garlic bread for because leaving that sauce on your plate would be downright disrespectful.

Nothing fancy. Nothing pretentious. Just good, old-fashioned comfort food with a little Italian accent and a whole lot of flavor.
