Soup season has arrived!

As the weather cools down, there's nothing better than a bowl of something warm and nourishing. Here's our super easy, delicious (and certified organic) pumpkin & butternut squash soup. High in vitamins, big on flavour and good for the planet too.

Ingredients:
3 cups peeled and cubed certified organic butternut squash
3 cups peeled and cubed certified organic pumpkin
1 tbsp certified organic olive oil
1/2 certified organic brown onion
2 cloves certified organic garlic
3 1/2 cups low sodium certified organic vegetable stock
1/4 tsp nutmeg
1/2 ground coriander
Salt & white pepper

Method:
1. Preheat oven to 180 and line a baking sheet with foil
2. Peel the skin off and cut the pumpkin and butternut squash into quarters and scoop out the seeds. Brush or spray with olive oil and sprinkle with salt and white pepper.
3. Place on the foil lined baking tray and roast in the oven for apprx 45 minutes or until a knife can easily be inserted into the flesh.
4. Add olive oil to a large pot and heat over medium-high heat. Once the oil it hot, add in the diced onion and garlic and saute until softens.
5. Add in the roasted butternut squash and pumpkin and stir to combine. Add in the nutmeg, coriander, salt and pepper. Pour in the stock and bring to a boil.
6. Once the soup comes to a boil use a stick blender to puree the soup until its smooth. Taste and add more seasoning if needed.

Our take on the viral "boy kibble" trend. The internet's obsessed with this no-fuss, high-protein bowl and we're here for it, with a dash of certified organic ingredients, of course!

Ingredients:
500g certified organic beef mince
1/2 cup edamame, thawed + microwaved for 30 seconds
1 small certified organic onion, finely diced
1/2 bunch certified organic spring onion, sliced
2 certified organic garlic cloves, chopped
2 tbsp herbs (mint + coriander work well)

Sauce:
1 tbsp each soy, oyster, sriracha, olive oil + lemon juice

Method:
1. Add beef to a hot pan
2. Sear for two mins for crispy edges
3. Break it up with a spatula on one side of the pan while onion cooks on the other
4. Add everything else + sauce
5. Fry 3–4 mins until glossy and cooked through
