Here are five delicious zucchini recipes that are easy to make and perfect for summer harvest season!
1. Zucchini Fritters
Ingredients
3 medium zucchini, grated
1 tsp salt
2 eggs
½ cup flour
½ cup Parmesan cheese
2 green onions, chopped
½ tsp garlic powder
Black pepper to taste
Oil for frying
Directions
Grate zucchini and sprinkle with salt. Let sit 10 minutes.
Squeeze out excess moisture.
Mix with remaining ingredients.
Drop spoonfuls into a hot skillet with oil.
Cook 3–4 minutes per side until golden brown.
Serve with sour cream or ranch.
2. Stuffed Zucchini Boats
Ingredients
4 large zucchini
1 lb ground beef or turkey
1 cup marinara sauce
1 cup mozzarella cheese
½ onion, diced
2 cloves garlic, minced
Italian seasoning
Directions
Cut zucchini lengthwise and scoop out centers.
Brown meat with onion and garlic.
Stir in marinara and seasoning.
Fill zucchini shells.
Top with mozzarella.
Bake at 375°F for 25–30 minutes.
3. Lemon Garlic Roasted Zucchini
Ingredients
4 zucchini, sliced
2 Tbsp olive oil
3 cloves garlic, minced
Juice of 1 lemon
Salt and pepper
Parmesan (optional)
Directions
Toss zucchini with oil, garlic, lemon juice, salt, and pepper.
Spread on baking sheet.
Roast at 425°F for 15–20 minutes.
Sprinkle with Parmesan before serving.
4. Chocolate Zucchini Bread
Ingredients
2 cups grated zucchini
2 eggs
½ cup vegetable oil
1 cup sugar
1 tsp vanilla
1½ cups flour
⅓ cup cocoa powder
1 tsp baking soda
½ tsp salt
1 cup chocolate chips
Directions
Mix wet ingredients.
Add dry ingredients and stir until combined.
Fold in chocolate chips.
Pour into greased loaf pan.
Bake at 350°F for 50–60 minutes.
5. Parmesan Zucchini Chips
Ingredients
2 zucchini, thinly sliced
2 Tbsp olive oil
½ cup grated Parmesan
1 tsp Italian seasoning
Salt and pepper
Directions
Toss zucchini slices with oil and seasonings.
Arrange on parchment-lined baking sheet.
Sprinkle with Parmesan.
Bake at 425°F for 15–20 minutes until crisp and golden.
Bonus Tip
