Our broad beans are looking great at the moment so we thought we'd share a simple recipe for anyone wondering what to do with their harvest.
Pasta e Fave is a traditional Italian dish that makes the most of fresh broad beans and a handful of everyday ingredients!
Pasta e Fave
Ingredients:
• 300g broad beans (double-podded if preferred)
• 250g pasta
• 1 onion, finely chopped
• 2 cloves garlic, crushed
• Olive oil
• Vegetable stock (about 500ml)
• Parmesan (or vegetarian hard cheese)
• Salt and pepper
• Fresh mint or parsley (optional)
Method:
1. Gently fry the onion in olive oil until soft.
2. dd the garlic and cook for another minute.
3. Stir in the broad beans and stock, then simmer for 10–15 minutes.
4. Cook the pasta separately and reserve a little pasta water.
5. Add the cooked pasta to the beans, mixing well. Add a splash of pasta water if needed.
6. Season to taste and finish with grated cheese and fresh herbs.
Simple, fresh and a wonderful way to celebrate what's growing right now.
