The latest series of workshops are about fermenting and making sauerkraut. The workshops are all booked up but do try this recipe at home to enjoy the benefits of fermented food. :)
Simple Sauerkraut Recipe
Cabbage and salt, I like to use Maldon Sea salt but any sea salt or rock salt is fine. Don’t use commercial table salt as it has iodine and anti-caking agents.
Additions could include - Green cabbage, grated carrots, and fennel bulb. Finely chopped fresh dill.
Spices such as black pepper, caraway seeds, cumin, mustard seeds, dried or fresh chili, turmeric. If you are adding spices add them with the salt so they get pounded and mixed into the cabbage.
You can make a red cabbage kraut with any of the above ingredients. You can also add small chunks of apple or some fresh cranberries.
Finely slice or shred the cabbage. Save some of the outer leaves for tops. You can use a food processor for this.
Mix all vegetables together in a large bowl and weigh. Work out and weigh out 2.5% salt. EG for 2 kg cabbage = 50g salt or 10 teaspoons. This may seem a lot but don’t be tempted to use less, the salt is essential for preserving the food safely.
Mix in the salt, then you need to massage or pound the cabbage for about 10 minutes until it starts producing liquid. Once you are happy there is enough liquid then pack into your clean jar. Press down the cabbage well until the liquid starts to pool at the top. Make sure you fill the jar right to the top. Small bits have a tendency to float to the top and attract mould so make sure scoop them out and you don’t leave too much airspace and weigh down well. This is where the cabbage lid on top helps, pack a piece of cabbage a bit bigger than the circumference of the jar on to the top of the mix and make sure is covered by liquid. Put your lid on loosely and place jar on a saucer in a cool spot (not the fridge).
It will be ready in about 3 to 4 weeks. The warmer it is the faster your sauerkraut will ferment.
It is normal for the brine to overflow, hence the need for the saucer.
Don’t be tempted to open the jar to poke and prod, it will introduce air and increase the likelihood of mould.
After 4 weeks, taste a bit, if its to your taste then put it in the fridge. It can keep for a year or more. If you like a stronger taste then leave out for a bit longer. It will continue to ferment in the fridge but at a much slower rate.

Our most recent workshops have been making fabric scrap jewelry. There is so much fabric waste around, even if you are not a sewer, you can use the lovely fabric from an old skirt or a pretty charity shop scarf. You dont even need to sew, some of the examples just used glue.
The most popular project was the bracelets, made by cutting thin strips of fabric and winding tightly on a wire frame, then finished off with contrasting embroidery thread. The earrings were also popular, I'd made a pair a few years ago with the gorgeous peacock fabric. Luckily I had some left, expect to see a few pairs around town :)

Some bonus pics of delicious lunches made by Illaria.
Next workshops are Fermentation.
All the workshops up to December are fully booked. !!
