I love using seaweed in my recipes because its nutritional benefits are plenty and can be a useful addition to a balanced plant based diet 🌱

Here is my seaweed sauté with carrots, parsnips, and brussel sprouts 🍴 loaded with nutritious vegetables and delicious flavor, have for a quick lunch or serve alongside some tofu or tempeh!

Hi Everyone,
It’s hard to believe it’s Spring, with all the cold weather we have been having.

In spite of the weather, I have been busy in my garden, planting seeds and seedlings, and harvesting my over abundance of Shiitake mushrooms!πŸ‘©πŸ»β€πŸŒΎ

I must share with all of you that inoculating mushrooms is one of the most satisfying chores you can do! We inoculated our logs back in June of 2020, and we are still getting pounds and pounds of mushrooms on a regular basis!πŸ„β€πŸŸ«πŸ„β€πŸŸ«

I like to cook them all at once and then freeze them in small batches that I can easily pull out of the freezer and add to my stir fry, or any dish I am making. It is a gift that keeps giving!! Tonight I am making my mushroom bolognese recipe that is featured in this week’s newsletter using my recently harvested shiitakes.🍝

It’s not a great time for our environment, the natural world, and because we are all interconnected, we humans 🌎 EPA protections and the Endangerment Finding have gone β€œpoofβ€πŸ’¨ The Forest Service and 193 million acres of protected lands is next on the chopping block 🌳πŸͺΎ Our natural resources and human health lie fully exposed to corporate extraction and pollution 🏭 Put another way, the federal government has no obligation or legal basis to protect the citizenry. The fight for clean water, air and soil is our problem!✊🏻

What to do? The answer is multi-faceted, but the first step is simple: We need to elect LOCAL LEADERS who walk the walk and aren’t just taking photo ops πŸ—£οΈπŸ—³οΈ

Lucky for us, Port Washington has a home grown candidate for NYS Assembly who makes climate change, protecting the environment and sustainability top priorities πŸ‘πŸ»

That amazing candidate is my good friend, Kim Keiserman.

I had the pleasure of providing the food for her fundraiser a couple of weeks ago. It was great to be in a room filled with people who want real change and are willing to fight for it.

April is quickly coming to an end and May is just around the corner which means that swiss chard season is here! πŸ₯¬πŸŒˆ

Spinach Pie (or kale and swiss chard pie) is one of my family’s all-time favorite dishes, so coming up with a vegan alternative that was going to be just as good, was a challenge I was up for!😎

I added the mushrooms with a splash of Tamari to bring some depth and saltiness to the dish and used the tofu to bind it together. The finished dish was so delicious and satisfying, that no one missed the feta cheese!🀭
