Halloween may be winding down, but don't toss that pumpkin just yet! There are plenty of ways to put it to good use instead of sending it to the landfill.
Cook it! If your pumpkin hasn't been painted or treated with chemicals, you can roast it and use the flesh for soups, muffins, and pumpkin bread. Smaller sugar pumpkins are especially good for cooking, but larger carving pumpkins can be tasty, too. Make extra puree and freeze it in 2-cup portions. Each bag is about the equivalent of a can of store-bought pumpkin.
Roast the seeds! Rinse them, toss with a little olive oil and your favorite seasonings, and roast until crisp. You've got yourself a delicious fall snack.
Compost what's left. If your pumpkin isn't suitable for eating, break it into smaller pieces and add it to your compost pile. It'll decompose faster that way.
A little creativity goes a long way toward reducing waste. Let's give those pumpkins a second life!
