When: Saturday 13th June

Time: 1pm- 3pm

Where: Held in our outdoor classroom and bush kitchen on our Permaculture Farm. Located inside the Australiana Pioneer Village. 10 Rose st, Wilberforce.

Tired of wondering what’s really in your food? Want to take control of your pantry and enjoy homemade, preservative-free preserves all year round? Or preserve your seasonal produce to last throughout the year? Join us for a hands-on Canning & Food Preservation Workshop where you’ll gain the confidence and skills to safely preserve your own food at home!

What You’ll Experience
• Engaging Presentation & Hands-On Learning: We’ll start with an informative session on safe food preservation, followed by a guided, hands-on canning experience
• Make Your Own Preserves: Using fresh, local, and seasonal ingredients, you’ll learn how to pressure can and waterbath can. In this session you will pressure can your own jar carrots to take home.
• Master Safe Canning Techniques: Learn how to preserve high-acid foods using the boiling water bath method and safely can low-acid foods, like vegetables, meats, and soups, with a pressure canner

🌧️ FRIDAY HOMESCHOOL CLASS 🌨️

Due to the extreme weather conditions and ongoing heavy rainfall, tomorrow’s class has unfortunately been cancelled in line with our Extreme Weather Policy.

With the significant rainfall over the past few days, continued rain today, and further heavy rain forecast tomorrow, the grounds throughout the Village and garden are extremely soaked, muddy, slippery, and unsafe to traverse.

With the safety and wellbeing of the children in mind, we feel it is in the best interest of all to cancel tomorrow’s class.

We will continue with this week’s topic of Natural Pest Control next week after we finish making our winter sauerkraut!

Autumn in Hampton means one thing… mushrooms! 🍂🍄‍🟫
Join us for a guided wild mushroom foraging experience through the magnificent conifer pine forests of Hampton, NSW, and learn how to confidently and safely forage for Saffron Milk Cap mushrooms (Lactarius deliciosus) and Slippery Jacks.

This is a hands-on, in-the-field workshop designed for beginners and curious food lovers alike. You’ll learn how to correctly identify edible species, where to find them, and how to harvest sustainably — skills you can return to year after year.

Saffron Milk Caps have been prized for centuries, appearing in ancient Roman frescoes in Pompeii and Herculaneum, gathered widely across Europe and China, and today sought after by top Sydney restaurants. Found growing beneath pine trees and often hidden under needles, these beautiful orange mushrooms are a true seasonal treasure — once you know how to identify them safely.

👣 Why forage with us?
If you’re new to mushroom foraging, it’s strongly recommended to learn alongside experienced mushroomers. This workshop provides real-time guidance in the forest so you can build confidence and knowledge the right way.

🔥 What you’ll learn & enjoy on the day:
• Guided foraging walk with hands-on identification and harvesting
• How to confidently identify wild Saffron Milk Cap mushrooms
• Cooking and preserving demonstration so you go home with the skills to cook and preserve your foraged bounty
• Take home all the mushrooms you forage on the day
• A relaxed picnic lunch break by the campfire (bring your own lunch)
• A take-home information handout with step-by-step instructions and recipes
• Boiling water provided for tea, coffee, or noodles

🧺 What to bring:
• Small sharp knife
• Basket or box for collecting mushrooms

• Fully enclosed shoes (gumboots recommended)
• Long pants (leeches can be present)
• Warm layers — it can get chilly in the forest

🌿 What are you getting up to this glorious Sunday?

It’s been a productive one here — a real “fill the pantry” kind of day.

Made a batch of spaghetti meat sauce which is now now safely pressure canned, with jars lined up ready for the shelf. 🥫
On the bench, three sourdough loaves are resting:

🍞 Cranberry, blueberry & cinnamon
🧄 Herb, cheese & garlic
🥖 Plain white

Days like this are a good reminder of how much you can actually produce at home with simple skills.

Each loaf of sourdough costs under $1.50 to make (the white plain loaf only cost $0.50c).
Each jar of sauce feeds a family of 5 for around $2 per person when served with homemade pasta or zucchini zoodles. 🍝🌱

That’s real, nourishing food — for a fraction of what it costs to buy ready made.

The jars are fully shelf-stable, so they don’t need refrigeration and can be stored safely in the pantry for up to 2 years (and even longer if canned correctly, though best used within that time for quality). It means meals are there when you need them, without relying on the fridge, the freezer, or a last-minute trip to the shops.

Learning how to do things like this isn’t just a “homesteading hobby” — it’s a practical way to:

• Save money
• Reduce reliance on supermarkets
• Build a more secure, resilient food supply at home

With rising fuel costs and ongoing supply chain disruptions, these skills are becoming more relevant again — not out of fear, but out of practicality.

Start small. One loaf of bread. One batch of preserved food. It adds up quickly.

Yesterday’s sourdough workshop was a great example of that — a group of people who now have the knowledge to bake their own bread at home, simply and affordably. 🍞

One of the many joys of running our programs and workshops is the incredible people we get to meet — people we likely never would have crossed paths with otherwise.

Yesterday, during our Wild Mushroom Foraging Workshop, we took a wonderful group of eager foragers through the conifer pine forest, teaching them how to safely identify the delicious Saffron Milkcap and Slippery Jack mushrooms.

Among the group was our youngest forager of the day, Lolly, who had just turned 9 years old and joined the workshop with her mum. It turned out that the mushroom foraging adventure was actually Lolly’s 9th birthday present — which we thought was pretty special.

Lolly is a passionate mushroom lover, junior herbalist, and nature enthusiast — and incredibly talented too! She arrived wearing the most amazing mushroom hat you’ve ever seen 😍🍄. Even more impressive, she made it herself when she was just 7 years old!

It was an absolute pleasure spending time with Lolly and her mum, sharing knowledge and helping further Lolly’s curiosity and skills in the traditional, age-old practices of self-reliance and learning from nature’s abundance. In a world often dominated by screens and instant gratification, hearing about Lolly’s interests and achievements was truly refreshing ❤️

We feel incredibly lucky that so many of the children in our children’s classes share Lolly’s curiosity and love of nature. Being surrounded by young people eager to learn about growing food, caring for animals, and working with nature gives us so much hope for the future. 🌱

At Permaculture Hawkesbury Valley, it’s never lost on us that the little humans we teach today will become the leaders of tomorrow. We feel incredibly grateful to play even a small role in passing on knowledge about working with nature, caring for the earth, building self-reliance, and strengthening resilient communities.

In an ever-changing world, these skills matter more than ever.
