Comfort food season is officially here, and this is one of my all time favourite recipes. Chicken, bacon and leek pie. Yum.

For many people living with brain injury, cooking can be more than just making dinner. It can help rebuild confidence, routine, memory, coordination and connection, and sometimes it’s simply about enjoying something comforting at the end of a long day.

This one turned out pretty special.

Ingredients:
500g diced chicken
150g streaky bacon
2 large leeks
2 garlic cloves
2 tbsp plain flour (for thickening)
200ml chicken stock
200ml thickened/heavy cream
1–2 tbsp Dijon mustard (adjust to taste)
1 sheet store-bought puff or shortcrust pastry
1 egg (for the pastry glaze)
Salt, black pepper, bay leaves, and butter (for cooking)

This has come around quick! This Wednesday we're off to the beautiful Bribie Island Butterfly House, and if you'd like to come along this is your chance to register quickly, so we can get organised.

It will be a calm, colourful, ABI‑friendly outing, perfect for connection, gentle movement, and something beautiful to look forward to.

I wasn't really sure first if I should be posting this, but it is so important to show the good and the bad. Some days just fly by and they are great, but some other days, like yesterday, are heavy reminders of how living with a brain injury can get in the way.

My takeaway is to be kind to yourself, and know that you have people around you to help. BIG and I will always be there to help if you need it. Today was a better day.
