Comfort food season is officially here, and this is one of my all time favourite recipes. Chicken, bacon and leek pie. Yum.
For many people living with brain injury, cooking can be more than just making dinner. It can help rebuild confidence, routine, memory, coordination and connection, and sometimes it’s simply about enjoying something comforting at the end of a long day.
This one turned out pretty special.

Ingredients:
500g diced chicken
150g streaky bacon
2 large leeks
2 garlic cloves
2 tbsp plain flour (for thickening)
200ml chicken stock
200ml thickened/heavy cream
1–2 tbsp Dijon mustard (adjust to taste)
1 sheet store-bought puff or shortcrust pastry
1 egg (for the pastry glaze)
Salt, black pepper, bay leaves, and butter (for cooking)
