A very creative and delicious baking day today. Inspired by my walk around Moon Valley Farm (MoonValleyFarm.net), I picked some sage, chocolate mint, and anise hyssop, which is a herb with a gentle licorice like flavor. The result was a trifecta of organic dairy/egg free baking goodness: chocolate ganache tartlets featuring chocolate mint, a white whole wheat bread with raisins and anise hyssop, and finally sage vanilla shortbread. The sage vanilla shortbread was my favorite. It had never occurred to me to pair the two together, but wow! Well worth further exploration. As is too often the case, I failed to take pictures of all this baking taste goodness, but I did bring these beautiful radishes home with me!

Last time I mentioned radishes here, I called the particular variety English Breakfast radishes instead of French Breakfast radishes. I'll hope that the farmers, Emma Williams who grew these lovelies will identify them below in comments.

Thanks to all of you who came out for today's cooking class at Moon Valley Farm.

I found myself really struck by the innovative ways people are working to ensure a more just/fair food system, by the individual commitment shown for eating real food and by the openness and willingness to try dishes new to you. It was a delicious pleasure cooking creatively and sharing a fresh, from scratch, organic meal together with you all!

Cooking Class Offered Tomorrow:
Plant-Based Sauces I: Cholesterol Lowering Nut and Seed Milks/Creams and Sauces

May 10, 2014 from 1-4 pm at Moon Valley Farm

So here's the thing. Nuts, like all plants, have zero cholesterol. Nuts can even help you lower your LDL cholesterol naturally. If you are looking to cut unhealthy cholesterol in your diet, consider incorporating more nuts! How might you do this? An ounce of raw nuts a day is the simplest way. And what if you're ready for something more? Nut and seed milks, sauces and salad dressings! Really deliciously good ones that you make from scratch at home in your own blender. For pennies on the dollar. In minutes. And you'll know exactly what's in them because you added it yourself.

Come join us on Saturday May 10th from 1-4 pm at the amazing Moon Valley Farm (moonvalleyfarm.net) in Cockeysville, MD for a fun and relaxed, hands-on cooking class to learn how to make your own nut milk, basic savory creamy sauce and basic creamy salad dressing. You will be taught how to make them to your own tastes and preferences. We will make and enjoy supper together as part of the class; providing inspiration for how you might use your new skills.

These classes help us to tweak the Everybody Eats model in action. Come be a part of Everybody Eats at Moon Valley Farm.

While not required, bringing your own blender will allow you to practice during the class which will empower you to incorporate your new learning. It will also allow for trouble-shooting based on the blender you have.

Note: Those with food sensitivities are welcome! Contact me to discuss your needs.

Feel free to come out to the farm early if you'd like! There are volunteer opportunities starting at 9 am (bring a change of clothes) and a yoga class will be taught by Emily Mullen at 11:30 am (the yoga class is pay what you can, please plan accordingly). The plants are starting to do their growing thing at Moon Valley Farm and having a peek at this might be fun too!

Group Cooking Class Offered:
Plant-Based Sauces I: Cream of the Crop

May 10, 2014 from 1-4 pm at Moon Valley Farm

This hands on cooking class will be held at Moon Valley Farm in Cockeysville, MD. It will cover nut milks, creamy sauces and salad dressings that are dairy-free; think dairy-free Alfredo and béchamel sauces, savory and sweet nut creams and seed and nut milks. Learn the basics and taste for yourself that dairy-free is delicious! And simple!

The 3-hour, hands-on class will include a multiple course, plant-based meal featuring the milk, sauces and dressings made during the class, in order to illustrate their versatility and empower participants to personalize the recipes to their liking. The lunch we will make together will emphasize organic ingredients.

Each person will go home with a jar of nut milk and either a nut cream sauce or a salad dressing.

The class is $35. Two spots will be reserved for individuals who would like to assist with the class in exchange for a scholarship to the class.

Allergen alert: The class will use nuts, seeds and possibly some soy and or wheat in the lunch. If you have food sensitivities, please let us know what they are via email, so we can be accommodating.

Microgreens from organic seeds, planted Tuesday, 4-8-2014, about noon at Moon Valley Farm and now ready for eating. This is a spicy mix of lively flavored greens. Can't you just taste them showing off in your mouth?!
