COOKING TIMELINE
As we continue to de-centralize, here is a timeline of what needs to happen when so that anyone can lead.
12:00pm - Start 25 lbs of dry beans boiling and boil the water.
2:00pm - Head to the Hollywood Farmers Market for food pickup. between Serrano and Harvad)
2:30pm - Set up kitchen, clean bowls, wash cutting boards, wash knives, and wipe down tables.
3:00pm - start chopping onions
3:30pm -
1. Drain beans and refill with boiling water
2. Start 2 rice cookers of rice (fill to 1/2 with rice, then boiling water, add salt and oil). Rice takes about 40 min to cook
3. Begin to carmalize onions in stew pot
4. Add other veggies, hardest first
4:15pm - start the 3rd rice cooker, rice takes about 30 min to cook
5:00pm -
1. no more hard veggies in the stew
2. Check the yellow supply bin for plates, utensils, gloves, hot sauce. Pick up anything missing at Smart and Final
3. Take last rice off the heat (make sure it's done first)
5:30pm -
1. Start prepping the salad
2. Spice the beans and stew
5:45pm - Start packing up to head downtown
6:00pm - HEAD OUT to Skid Row to share some goodness! If there are no more people to share with at Pershing, head to 6th and San Julian to share the rest
