Our stories live in our food...Pure genius. This is a Puerto Rican story. Read on through the link....

Serenata. A whole meal built out of a fish that was salted because nobody had a refrigerator. 🐟

Bacalao came to the island in wooden crates, stiff as a board, packed in salt so it could survive a boat crossing and a warm climate without spoiling. It was cheap protein for people who could not afford much else, and it was often what got eaten on Fridays and through Lent when meat was off the table. Poverty food and religion food at the same time, which is how a lot of the best dishes on earth got invented.

And what did Puerto Ricans do with a hard slab of salted cod? Soaked it overnight, changed the water two or three times, boiled it, flaked it, and then built something beautiful around it. Boiled green banana. Yautía. Tomato. Raw onion in thin rings. Hard boiled egg. Olives. Avocado. A generous pour of olive oil and a squeeze of lime, tossed together and served cool on a hot afternoon.

That is serenata, and the name tells you everything. 🇵🇷 They named a peasant dish after a love song. Nobody with money invented this. It came from people who had salt fish and root vegetables and decided that was no reason not to eat well.
