time to gather around food with family and friends to honor ourselves and ancestors, as well as set intentions for the new year under the new moon! invisible to the eye, the new moon begins the lunar cycle by being aligned perfectly between the sun and earth, hiding its illuminated face from us.

zongzi, featured in amwa cookbook 01: potluck by angela lin

zongzi is a traditional chinese rice dish made of glutinous rice stuffed with your choice of fillings then delicately wrapped in bamboo leaves. angela’s zongzi recipe is passed down from her mother–a labor intensive sticky rice dumpling that is packed delicately with marinated savory pork butt which is then boiled for hours, producing a sweet tea-leaf flavor from the surrounding bamboo leaves that intensifies with time.

this recipe in amwa cookbook 01: potluck is in remembrance of angela’s mother who passed away in north carolina last year. ngela honors her memory and zongzi legacy with this recipe.

umami tofui, featured in amwa cookbook 01: potluck

umami tofu is a diabetes and vegetarian friendly tofu steak that is thickly coated with piquant marinade before it is pan fried and caramelized. however, the real star of this recipe is the sharp and zesty miso mayo marinade: a hybrid of japanese and western flavors that come together to create an intense umami flavor. to serve, nestle tofu steaks over fresh greens and sprinkle with parmesan flakes, drizzling plenty of miso mayo sauce on top.

chisa chose this recipe from their childhood because it advocates for umami. umami is often achieved in asian cuisines through msg, an ingredient that has a bad reputation for causing the derisively named “chinese headaches” and associated with “unhealthy” foods. by featuring this same umami, through natural ingredients, chisa’s dish challenges the use of msg as a controversial ingredient and serves us glutamates in a delectable and healthy way.
