🍽️ CAN YOUR KITCHEN ACTUALLY EXECUTE YOUR MENU?
A dish can sound incredible on paper.
The flavor works. The presentation is beautiful. The concept fits the brand.
But then I have another question:
Can your kitchen actually make it work?
Menu curation isn’t just about creating great food. Every item has to make sense within the reality of the business serving it.
⚙️ EQUIPMENT
Do you actually have the equipment needed to execute the dish consistently, especially during peak service?
🔪 PREP
How much prep does it require? More importantly, what does that prep look like when you’re preparing an entire menu?
⏱️ TICKET TIME
A beautiful dish isn’t helping anyone if it creates a bottleneck every time someone orders it.
👥 LABOR
Can your current team execute it properly and consistently, or does it require more hands than your operation realistically has?
📦 STORAGE
Every new ingredient needs somewhere to live. Refrigerator space, freezer space, dry storage, prep containers… it adds up quickly.
And this is where menu curation gets very real.
The same menu that works beautifully in a full-service restaurant may be completely impractical inside a food truck.
A café has different limitations than a dessert shop.
A mocktail bar has different needs than all three.
So when I’m curating a menu, I’m not only thinking:
Does this taste good?
I’m also thinking:
Can we make it?
Can we make it efficiently?
Can we make it consistently?
Can we make money doing it?
Because creativity might get an idea onto the menu.
