Thanks to the generosity of our community donors and partnerships, we were honored to present the Lakes Area Food Shelf in Baxter with an $8,000 donation. We were also joined by Essentia Health, who presented a donation on behalf of their Community Engagement Funds. When organizations come together, amazing things can happen—and together, we can continue to improve health and wellness throughout our county.

Healthy eating does not have to be complicated 🥕🍎

One simple way to build healthier meals is by following the “Healthy Eating Plate” from Harvard Nutrition Source:
🥦 Fill half your plate with fruits and vegetables
🌾 Choose whole grains
🍗 Add healthy protein
💧 Drink more water and fewer sugary drinks

Small changes over time can make a big difference in energy, heart health, and overall wellness. Healthy habits do not have to be perfect — they just have to start somewhere.

Carrot Cucumber Summer Salad 🥕🥒

Fresh, crunchy, and perfect for summer lunches or BBQs.

Ingredients:

* 2 cups shredded carrots
* 1 cucumber, sliced
* 2 tbsp olive oil
* 1 tbsp lemon juice
* Salt & pepper to taste
* Fresh dill or parsley (optional)

Directions:

1. Add carrots and cucumber to a bowl.
2. Toss with olive oil, lemon juice, salt, and pepper.
3. Top with fresh herbs and serve chilled.

Simple, refreshing, and full of crunch!

What to look for:

Try to keep it lower when you can—many drinks and snacks have more than you think

• Protein
Helps keep you full and energized longer

• Ingredients list
If you can recognize most of the ingredients… that’s a good sign

• Balance

Instead of cutting things out, try adding:
🥕 veggies
🍗 protein
🌾 whole grains

You don’t need to be perfect.
Just a little more aware.

Carrots… but make them actually taste good 🥕🔥

With carrots as our Vegetable of the Year, we had to share one of our favorite easy recipes—and this one is so good.

Sweet, a little savory, and roasted just enough to get those crispy edges… these are the kind of carrots people go back for.

Honey Garlic Roasted Carrots

Ingredients:
• 1 lb carrots
• 1 tbsp olive oil
• 1–2 tbsp honey
• 2 cloves garlic (minced)
• Salt + pepper
• Optional: parsley or parmesan

Directions:

1. Preheat oven to 400°
2. Toss everything together
3. Spread on a baking sheet
4. Roast 20–25 minutes (flip halfway)
5. Finish with parsley or parmesan
