Shout out to the amazing team from AppsFlyer who stepped away from their screens and came to our visitors center a couple of days ago!

They got to know the story, the people and the initiatives behind Sindyanna of Galilee, learned how we produce our award-winning olive oils, and enjoyed our fun za’atar workshop.

And they left with a bottle of that olive oil and a jar of za'atar mix that they made with their own two hands.

💚 Proof that heart-healthy and delicious foods aren't mutually exclusive 💚

Last week we returned to the “Golden Path” festival at Haifa’s Talpiot Market, presenting our fair-trade products alongside selected olive oil producers. This annual culinary celebration showcases the flavors, colors and aromas of the local cuisine.

🍅🫒 This year the festival organized by ענף הזית centered on the “power couple” of Mediterranean cuisine: olive oil and tomatoes. A combination that’s not only delicious, but has also proven to be particularly successful when it comes to heart health.

The market has become a magnet for foodies from across the country in recent years, thanks largely to the dozens of restaurants that operate there.

We were especially happy to collaborate with Chef Rivka Santee of Mile Mala, who cooks with our olive oil year-round and created two special dishes for the occasion:

🥟 Kreplach filled with labneh, parmesan and chives in tomato consommé, finished with our Cortina olive oil

🍲Tomato stew with pickled chili peppers, drizzled with our Picual olive oil

🥪 Talek Cafe also joined in with special sandwiches prepared with our olive oil

Just thinking about those dishes makes us wish we were back there again 🤤

🫒 Olive oil, za'atar, fair trade, social change, and quite a few young Americans who didn't want to leave 🫒

Our visitors center is back, and we're loving every minute of it!

Last month, Hanan, Devora and Nadia had the pleasure of hosting two Taglit groups with a couple of dozen young adults from the US in each one.

They discovered the story behind Sindyanna: fair trade, social change, our farmers, and what seemed to interest them most - the magic of olive oil.

🌿Then things got delicious with our fun za'atar workshop.

They learned what za'atar is (and how to use it in the kitchen), mixed their own blend to take home in a jar, and baked a yummy pita with their mixture sprinkled on top.

🌟Nothing can stop us, not even war, settlers or bureaucracy 🌟

We’re very proud to announce that the Kafr Qaddoum Agriculture Cooperative Society has just received their first ROC (Regenerative Organic Certificate®) approval from the Regenerative Organic Alliance 🎊

After investing enormous efforts in preparing for the inspection, this represents an extraordinary achievement in the face of obstacles that most farming communities aren’t familiar with:

- Qaddoum is in the Palestinian West Bank where rampant settler violence regularly prevents farmers from reaching their own groves.
- The international inspection took place last November remotely due to the war and the general security situation that was on the verge of explosion.

But what we are most proud of is what this certificate symbolizes: the deep cooperation between the Qaddoum Cooperative and Sindyanna teams, and the enormous trust we have built together over the past six years. 🤝🤝🤝

We would also like to extend our heartfelt thanks to our longtime partner, Dr. Bronner's. Without their unwavering support, this achievement would not have been possible.

🫒Olive trees are pretty drought tolerant, but only if you know when to step in!

After a winter of Mediterranean rains, we recently turned the water system back on at our Scottish Grove in the Jezreel Valley where we grow two main varietals - Coratina and Picual.

Irrigation timing is more important than most people realize. Water too early or too late, and your entire olive crop will suffer. Here's how we get it right.

No calendar can tell you when to flip on the water main. It’s an agronomic decision based on when the last effective rain fell and the level of water reserves in the soil.

In a Mediterranean climate, the rule of thumb is to resume irrigation roughly 21 days after that last meaningful rainfall.

Why does it matter so much? Because olive trees have two critically sensitive windows during the growing season:

🌸 Spring – Flowering & Fruiting:
This is when the tree needs to transform its flowers into fruit. If we add water stress at this stage, the flowers and fruitlets may drop since the trees won’t have enough energy, leading to a smaller harvest.

☀️ Summer – Pit Hardening through Harvest:
Once the pit hardens, the fruit shifts into oil development and accumulation mode. Sufficient water supply at this stage directly determines the size of the fruit, as well as the quantity and quality of the oil it produces.

We usually irrigate twice a week in volumes calculated according to cubic meters per land area (dunam/acre) and the evaporation rate in each period as published by the ministry of agriculture. The goal is simple: replace all the water that the trees lose through evaporation.

What happens when you teach a woman to weave? She goes on to teach a village, or three.

The women who learned basket weaving at Sindyanna are taking the skills they learned on the road, earning a living and contributing to their community.

✨ Nadia Giol, who manages our Visitors Center, recruited two of our most experienced workshop leaders — Myasar Hamaisi and Nahida Zreiki — to join a project of רשות ניקוז ונחלים קישון - Community Building through Crafts, an initiative focused on training and empowering Arab women across the region.

🧺 Together, they've brought hands-on basket-weaving workshops to women in the villages of Iksal, Muqeible, and Sandala, working with willow and palm branches from our own stock. They've also led weekend weaving sessions for both children and adults, working to spread those skills across multiple generations.

💬 The response has been amazing. Participants described the experience as a rediscovery: "How wonderful it is to remember how many beautiful things can be created from natural materials." And about our team, they had this to say: "You bring positive energy, teaching with patience and professionalism. You consider the participants' abilities and adapt the product to each one's capacity. It's a real joy that you are here."

💪 This is exactly what empowerment looks like, where new skills become livelihoods and women learn to lead, while their communities grow stronger.

Through closures, rockets, war and uncertainty, the Sindyanna team has never stopped working towards our goal of a better future.

We're still producing award-winning olive oil. Still hosting groups. Still cooking together. Still training women. Still tending our groves.

Rosemary? Za'atar? Chili? The debate is on and we need your vote!

We are trying to decide which new olive oil and tahini flavors we should launch next for our retail customers (bulk buyers can already purchase them all in large quantities).

But before we make any decisions, we want to hear from you.

A few weeks ago we ran the same poll among members of our Israeli customer club (they could each pick two favorites in each category).

Here’s what they said:

🫒 Olive oil - Rosemary and za’atar came up on top, with chili, lemon and oregano close behind (all getting 30-40% of the votes so it’s genuinely too close to call).

𓇢 Tahini - The overwhelming favorite was whole grain sesame with 67% of the vote. Organic came in second with 43%, followed by light tahini, garlic, za’atar and chili (with 10-20% of the votes).

So which would YOU choose (two in each category)?
