🍽️✨ Thank you to everyone who joined our From Lab to Table: The Future of Food event!

We had a fascinating evening exploring how microbes, fermentation, and research gastronomy are shaping the future of food. The Head R&D Chef Kim Wejendorp at DTU-BRIGHT shared how bacteria, yeast, and fungi are being used in food research and innovation — from new approaches to cheese, chicken, and meat (burger) alternatives to more sustainable versions of familiar everyday foods.

The discussion also touched on some of today’s biggest food challenges: growing populations, land use limitations, and the need to reduce and reuse food waste more effectively. One especially interesting perspective was how changing eating habits is not only about technology or sustainability, but also about culture. Food is deeply connected to cultural identity, traditions, and emotions, and these “cultural codes” play an important role in whether people are willing to embrace new foods and more sustainable choices.

Thank you to everyone who joined the discussion and brought so many thoughtful questions and reflections throughout the evening. We look forward to seeing you again at future Lyngby International Club events! 🌱

♻️🔥 What really happens to our waste? Yesterday, we saw it up close.

We had an amazing visit to Vestforbrænding, where waste is treated not as trash, but as a resource. From receiving waste and sending recyclable materials onward, to converting the remaining residual waste into electricity and district heating, they play a key role in managing waste across several municipalities in and around Copenhagen.

We also saw a constant flow of huge trucks coming and going — unloading waste and transporting sorted materials to recycling facilities 🚛♻️

And yes… we witnessed those giant cranes lifting mountains of waste straight into massive furnaces (from a safe viewing deck 👀🔥)—definitely a moment you don’t forget!

Thanks to everyone who joined us for this super engaging and eye-opening tour 🙌

✨ More exciting events are coming — follow us so you don’t miss out!
