🔍 𝐈𝐃𝐄𝐍𝐓𝐈𝐅𝐈𝐂𝐀𝐓𝐈𝐎𝐍
Few African birds are as distinctive as the Grey Crowned Crane. Standing approximately one metre tall, it has a predominantly grey body, striking white wing patches, chestnut and golden wing feathers, a white cheek patch and red throat pouch. Its most recognisable feature is the magnificent crown of stiff, golden feathers that gives the species its name.

Males and females are similar in appearance, although males are generally larger.

💡 𝐃𝐈𝐃 𝐘𝐎𝐔 𝐊𝐍𝐎𝐖?
🪶 Grey Crowned Cranes belong to an ancient lineage of crowned cranes and are among the most distinctive members of the crane family.

🪶 Unlike most other cranes, they can perch and roost in trees – their long hind toe enables them to grip branches.

🪶 They are omnivorous, feeding on seeds and other plant material as well as insects and small vertebrates.

🪶 Their courtship displays are wonderful to observe, involving bowing, jumping, running, wing-flapping and tossing vegetation into the air.

🪶 Two subspecies are recognised. The Southern African subspecies, 𝘽𝙖𝙡𝙚𝙖𝙧𝙞𝙘𝙖 𝙧𝙚𝙜𝙪𝙡𝙤𝙧𝙪𝙢 𝙧𝙚𝙜𝙪𝙡𝙤𝙧𝙪𝙢, occurs from southern Mozambique and Zimbabwe into South Africa, with smaller numbers farther west.

🏞 𝐃𝐈𝐒𝐓𝐑𝐈𝐁𝐔𝐓𝐈𝐎𝐍 & 𝐇𝐀𝐁𝐈𝐓𝐀𝐓
Grey Crowned Cranes occur across eastern and Southern Africa. In South Africa, their strongholds include the moist grasslands and wetlands of KwaZulu-Natal and the northern Eastern Cape, with populations also occurring in parts of Mpumalanga and the north-eastern Free State.

They depend on a mosaic of wetlands and surrounding grasslands, often nesting within or along the margins of permanent or temporary wetlands.

🐣 𝐁𝐑𝐄𝐄𝐃𝐈𝐍𝐆 𝐁𝐄𝐇𝐀𝐕𝐈𝐎𝐔𝐑
Pairs form strong bonds and defend breeding territories. Nests are generally constructed from wetland vegetation and concealed among reeds, sedges and grasses. Their elaborate courtship displays reinforce pair bonds and are performed by both sexes.

🌍 𝐂𝐎𝐍𝐒𝐄𝐑𝐕𝐀𝐓𝐈𝐎𝐍 𝐍𝐎𝐓𝐄
The Grey Crowned Crane faces significant conservation pressures across its African range. Loss and degradation of wetlands and grasslands remain major threats, alongside illegal capture and trade, collisions with power lines, disturbance of breeding sites and other human-induced pressures.

Protecting wetlands and the surrounding grasslands is therefore fundamental to securing the future of these remarkable birds.

The centrepiece of this month’s Culinary Safari celebrates one of South Africa’s finest cuts of meat.

Chef Tarryn marinates the lamb with olive oil, fresh lemon juice, garlic, salt and pepper before carefully searing it over a high heat to lock in flavour and tenderness. Finished with butter, onion and a splash of lager, the pan develops into a rich beer butter jus that perfectly complements the delicate sweetness of roasted vegetables and creamy sweet potato mash.

The dish is finished with fresh chimichurri, adding brightness and freshness that perfectly balances the richness of the lamb.

☀️Marico Sunbird (𝘾𝙞𝙣𝙣𝙮𝙧𝙞𝙨 𝙢𝙖𝙧𝙞𝙦𝙪𝙚𝙣𝙨𝙞𝙨)
𝐈𝐔𝐂𝐍 𝐂𝐨𝐧𝐬𝐞𝐫𝐯𝐚𝐭𝐢𝐨𝐧 𝐒𝐭𝐚𝐭𝐮𝐬: Least Concern

🔍 𝐈𝐃𝐄𝐍𝐓𝐈𝐅𝐈𝐂𝐀𝐓𝐈𝐎𝐍
The Marico Sunbird is one of southern Africa’s most striking nectar-feeding birds. The breeding male is unmistakable with its iridescent metallic green head and throat, chestnut breast band and bright yellow pectoral tufts, while the female is more subtly coloured with olive-brown upperparts and pale yellow underparts. Although small in stature, this energetic bird is often revealed by its persistent calls and rapid movements between flowering shrubs.

💡 𝐃𝐈𝐃 𝐘𝐎𝐔 𝐊𝐍𝐎𝐖?
🪶 Unlike some other sunbirds, it is largely sedentary and highly territorial, especially during the breeding season when males sing conspicuously from prominent perches.

🪶 Sunbirds are among Africa’s most important pollinators, transferring pollen between flowering plants while feeding on nectar. Their long, curved bills and specialised brush-tipped tongues are perfectly adapted for tubular flowers.

🪶 Although nectar forms most of their diet, Marico Sunbirds also feed on spiders and insects, particularly when raising chicks.

🏞 𝐃𝐈𝐒𝐓𝐑𝐈𝐁𝐔𝐓𝐈𝐎𝐍 & 𝐇𝐀𝐁𝐈𝐓𝐀𝐓
The Marico Sunbird is widespread across southern Africa, favouring open woodland, savanna, bushveld and well-vegetated gardens. It thrives wherever flowering shrubs and trees provide a reliable source of nectar throughout the year. In the Waterberg, it is especially associated with flowering aloes, wild dagga (𝘓𝘦𝘰𝘯𝘰𝘵𝘪𝘴), honeysuckle and mistletoes.

🪺 𝐍𝐄𝐒𝐓𝐈𝐍𝐆 & 𝐁𝐑𝐄𝐄𝐃𝐈𝐍𝐆
The female constructs an untidy oval or purse-shaped nest using fine grass, bark fibres, lichen, leaves and spider webs. Hidden among dense vegetation, the nest usually contains two eggs. While she builds and incubates, the male often remains nearby, singing from exposed perches to defend his territory.

🌍 𝐂𝐎𝐍𝐒𝐄𝐑𝐕𝐀𝐓𝐈𝐎𝐍 𝐍𝐎𝐓𝐄
Although the Marico Sunbird is currently classified as Least Concern, healthy populations depend on indigenous flowering plants that provide nectar throughout the seasons. Conserving natural woodland and planting nectar-rich indigenous species in gardens and reserves helps sustain not only sunbirds but many other pollinators that underpin healthy ecosystems.

Warthog curry bunny chow – a light, fruity and creamy coconut curry served in homemade bunny chow bread, accompanied by cooling raita, minted pawpaw, and a fresh tomato, red onion and coriander salsa. Perfect for cool winter evenings in Tutwa Camp Lapa on Dabchick Wildlife Reserve.

Baked citrus yoghurt – a refreshing contrast to the warmth of the curry, with that special citrus sweetness.

🔥 𝐓𝐡𝐞 𝐡𝐞𝐚𝐫𝐭 𝐨𝐟 𝐭𝐡𝐞 𝐦𝐞𝐧𝐮 – 𝐖𝐚𝐫𝐭𝐡𝐨𝐠 𝐂𝐮𝐫𝐫𝐲 𝐁𝐮𝐧𝐧𝐲 𝐂𝐡𝐨𝐰
The star of the menu is a slow-cooked warthog curry that celebrates locally sourced game meat and the layered flavours of Cape Malay-inspired cooking.

The curry begins with cubes of warthog shoulder, neck or leg, browned to seal in their natural juices before being slowly simmered for more than two hours. Where warthog is not available, any good-quality boneless game meat or mutton will work just as well.

Chef Tarryn builds the curry around a fragrant blend of:
• Fresh onions
• Garlic
• Fresh ginger
• Curry leaves
• Mild curry powder
• Garam masala
• Ground cumin
• Ground coriander
• Turmeric
• Tomato paste
• Coconut milk
• Vegetable stock
• Homemade lemon chutney
• Fresh lemon juice
• Fresh coriander

🥥 The coconut milk creates a silky, creamy texture, while the chutney provides subtle sweetness. A squeeze of fresh lemon juice is added only at the very end to brighten the curry and balance the rich spices.

The finished curry is spooned into freshly baked homemade bunny chow loaves, accompanied by cooling raita, sweet minted pawpaw, and a vibrant tomato, red onion and coriander salsa.

✔ Brown the meat before simmering to lock in flavour and moisture.
✔ Cook low and slow – patience creates beautifully tender meat.
✔ Sauté the spices gently to release their natural oils and develop richer flavours.
✔ Fresh accompaniments make all the difference. Tomato and onion sambal, grilled nectarines, banana, sautéed apple or pawpaw all complement the curry beautifully.
✔ Add the lemon juice only just before serving to keep the flavours bright and aromatic.
