LET'S MAKE ZERO WASTE A NORM!

Every day, our waste system makes a climate decision: mix and bury organic resources—or separate them and return nutrients to the soil.

Drawing on the opening remarks of Froilan Grate at the Second Regional Congress on Organics and Climate, this carousel connects the Asia-Pacific landfill crisis with local practice in Hội An. Hoi An Eco Hub and the Green Youth Collective ecosystem are linking source separation, organics recovery, reuse and refill, youth learning, and waste-worker participation.

The solutions exist. What they need are policy, capacity, finance and a movement grounded in justice.

Mỗi ngày, cách chúng ta quản lý rác tạo ra một lựa chọn khí hậu: trộn và chôn lấp tài nguyên hữu cơ—hay phân loại để đưa dinh dưỡng trở lại đất.

Từ thông điệp mở đầu của Froilan Grate tại Đại hội Khu vực lần thứ hai về Rác hữu cơ và Khí hậu, carousel này kết nối khủng hoảng bãi chôn lấp ở châu Á – Thái Bình Dương với thực hành tại Hội An. Hoi An Eco Hub và hệ sinh thái Green Youth Collective đang kết nối phân loại tại nguồn, tuần hoàn hữu cơ, reuse–refill, giáo dục thanh niên và sự tham gia của công nhân rác thải.

Many tourism businesses want to reduce waste. The difficult part is not making the commitment—it is turning that commitment into a service system that works every day.

Waste reduction is shaped by many actors, but their responsibilities are not the same.

Management creates the conditions through priorities, budgets, purchasing standards and clear ownership. Staff translate those decisions into daily practice—and need practical workflows, adequate tools, time and a voice in improving the system. Suppliers influence what products and packaging enter the business. Guests should experience low-waste choices as convenient, comfortable and thoughtful hospitality—not as an extra responsibility placed upon them.

These parts cannot be designed separately. A refill solution, for example, affects procurement, delivery, storage, hygiene, staff routines, guest communication and maintenance. If one part does not work, the solution is unlikely to last.
What remains after prevention also needs a reliable pathway: good separation, quality control, appropriate collection and a real next use. Measuring kilograms alone is therefore not enough. Businesses also need to understand staff workload, supplier performance, guest feedback, contamination, costs and what actually happens after collection.

A credible commitment is one the whole service can deliver consistently—and continue improving through experience.

Nhiều doanh nghiệp dịch vụ du lịch muốn giảm rác thải. Phần khó nhất không phải là đưa ra cam kết, mà là chuyển cam kết đó thành một hệ thống dịch vụ có thể vận hành tốt mỗi ngày.
Nhiều bên cùng ảnh hưởng đến kết quả giảm rác, nhưng vai trò và trách nhiệm của họ không giống nhau.
Ban quản lý tạo điều kiện thông qua định hướng, ngân sách, tiêu chuẩn mua sắm và phân công rõ ràng. Over time, we got many quiries and interactions via inbox and phone about how the Saturday morning's Community Zero waste market works.

They are not big promotional events that attract hundreds of people for one day only. In fact, the exchange and conversations about local - circular economy can never be so big. It is made possible by smallholder farmers, women-led groups, community enterprises...they are all intimate and small. And it is beautiful.

The most important thing, is that our events are based on real operations and daily practices. The kind of practice that stays and lasts.

The video shows how the event market space is. We look forward to seeing you at Saturday mornings and talk to you about your activism or concern about composting pile or plastic waste.

WASTE BEGINS WITH A PURCHASE - NOT A BIN.

In tourism, waste begins when a business decides what to buy, how a service will be delivered, and which costs will remain invisible.
In the hospitality sector, many waste streams are designed into the guest experience: individually packaged amenities, bottled water, delivery wrapping, disposable foodware and food prepared but never eaten.

If a hotel asks staff to sort these items while procurement and service design remain unchanged, it is managing the consequences - not changing the system.

Zero Waste starts Upstream: refuse what is un-necessary; reduce quantities; redesign how the service is provided; apply reuse and refill; then separate and recover what remains.

Hoi An Eco Hub helps connect both sides of the bin. Material flows at the back end reveal what repeatedly enters the system. That evidence can return to hotels, restaurants, suppliers and public actors - where the next purchase, contract or service can be designed differently.

For a tourism destination, the question is not only, "Where will this waste go?" It is also, "Why was it created in the first place - and who can prevent it next time?"

Trong hoạt động du lịch, Rác thải bắt đầu khi doanh nghiệp quyết định mua gì, cung cấp dịch vụ như thế nào và những chi phí nào sẽ bị đẩy ra ngoài hệ thống. Nhiều dòng rác đã được "thiết kế sẵn" vào trải nghiệm của khách: đồ dùng phòng tắm đóng gói riêng, nước uống đóng chai, màng bọc giao hàng, dụng cụ ăn uống dùng một lần và thực phẩm được chuẩn bị nhưng không được sử dụng.

Nếu khách sạn yêu cầu nhân viên phân loại những vật này trong khi mua sắm và thiết kế dịch vụ không thay đổi, chúng ta mới chỉ quản lý hậu quả - chưa thay đổi hệ thống.

Zero Waste bắt đầu từ thượng nguồn: từ chối những gì không cần thiết; giảm số lượng; thiết kế lại cách cung cấp dịch vụ; áp dụng reuse và refill; sau đó mới phân loại và phục hồi phần còn lại.

Hoi An Eco Hub giúp kết nối hai phía của thùng rác. Dòng vật liệu ở cuối hệ thống cho thấy những gì liên tục đi vào. Bằng chứng đó cần quay trở lại khách sạn, nhà hàng, nhà cung cấp và cơ quan công - nơi một quyết định mua sắm, hợp đồng hoặc dịch vụ tiếp theo có thể được thiết kế khác đi.

WHAT DOES IT TAKE TO PROTECT THE FUTURE OF HOI AN AS A HERITAGE DESTINATION?

It means caring not only for its historic buildings, but also for the communities, rivers, farms and living landscapes that sustain the place.

Today, growing volumes of solid waste, food waste and single-use plastics are placing increasing pressure on these systems. But waste is not simply the result of careless behaviour. It is produced by products, services and operations designed around disposability.

Recycling has a role—but it cannot solve the problem alone.

We need to prevent unnecessary waste, redesign products and services, expand reuse and refill, and separate unavoidable food waste so that nutrients can return to soils and farms instead of generating methane in landfills.

This transition also needs people and infrastructure. Waste workers, farmers, residents and local enterprises are not simply beneficiaries; they are the operators and stewards who make local circular systems work. Tourism businesses, meanwhile, need credible pathways to turn sustainability commitments into daily operations.

Hoi An Eco-Hub helps connect these missing pieces. As a shared local platform, it brings together public authorities, tourism businesses and communities to support waste prevention, reuse and refill, resource recovery, local livelihoods, learning and landscape regeneration.

Inside, there are waste workers being heard.
Not only collecting waste, but joining discussions, sharing field experience, and helping shape a system that works better for the people who handle waste every day.

Inside, there is a local community learning to see waste differently.
Residents are trained to sort waste at source, understand why clean and dry materials matter, and learn how waste can become a resource instead of pollution.

Inside, there is practical education on single-use plastic.
People learn how plastic affects health, the environment and local livelihoods — and what they can do to reduce unnecessary single-use items in daily life.

Inside, waste workers are trained in materials recovery.
They learn how to identify different material types, sort them correctly, reduce contamination, and improve the chance that recyclables can actually enter the recycling pathway.

Inside, the operation team is building professional capacity.
From source separation and collection schedules to data recording, storage, quality control and material flow, the team is learning how to manage waste as a local system — not just as an end-of-pipe problem.

Inside, residents bring clean, dry recyclables from home.
This small action changes the whole system: cleaner materials, safer work, better recovery, and stronger community participation.

Inside, people practice more sustainable consumption.

Trong bối cảnh sản xuất nông nghiệp ngày càng phụ thuộc vào hóa chất và độc canh — khiến hệ sinh thái đất và sức khoẻ con người chịu tác động tích tụ theo từng vụ mùa; khi nền kinh tế quy mô toàn cầu đẩy thực phẩm đi rất xa trước khi đến bàn ăn, kéo theo phát thải còn đang trong tranh cãi xem ai chịu trách nhiệm; khi bao bì nhựa dùng một lần trở thành mặc định của chuỗi phân phối và để lại ô nhiễm vượt quá khả năng xử lý của cộng đồng địa phương — vai trò của một hệ thống thực phẩm từ nông trại tới bàn ăn ở quy mô địa phương không còn là lựa chọn thay thế. Nó là điều kiện tiên quyết để bảo vệ sức khoẻ của đất và người, và nền tảng của một tương lai sống-được.
Nhưng hiện tại, hệ thống đó chưa tồn tại như một tổng thể.
Người nông dân sinh thái có sản phẩm — nhưng khó tiếp cận thị trường trả đúng giá.
Doanh nghiệp du lịch có khách — nhưng không có chuỗi cung ứng minh bạch
Hệ thống tuần hoàn tài nguyên - Địa phương tạo ra hàng tấn rác hữu cơ mỗi ngày, nhưng phần lớn chưa quay trở lại nuôi dưỡng đất và sản xuất nông nghiệp.

Người tiêu dùng có ý thức và sẵn sàng chi trả — nhưng không có hệ thống giúp họ lựa chọn.

There is a saying:
"If we are fortunate, we may only need a doctor a few times in our lives. But we rely on farmers at least three times every day."
Today, however, the systems that feed us are increasingly disconnected from the health of the land.

Industrial agriculture has become heavily dependent on synthetic chemicals and monocultures, gradually degrading soil ecosystems while leaving long-term impacts on human health. Food often travels thousands of kilometres before reaching our tables, creating emissions whose responsibility remains widely debated. Meanwhile, single-use plastic packaging has become the default throughout supply chains, leaving local communities to deal with pollution far beyond their capacity to manage.
In this context, rebuilding local farm-to-table food systems is no longer an alternative. It is a prerequisite for protecting both healthy soils and healthy people, while creating the foundations for a future that remains liveable.
Yet such a system rarely exists as an integrated whole.
Ecological farmers produce high-quality food, but struggle to reach markets willing to pay fair prices.
Tourism businesses have visitors, but often lack transparent, local supply chains.
Communities generate tonnes of organic waste every day, yet most of it never returns to nourish agricultural soils.
Conscious consumers are willing to make better choices, but the systems that enable those choices are still missing.
These are all pieces of the same puzzle—still scattered apart.
