Today at the Glenwood Fresh Market, Susan whipped up a Black Bean Enchilada Casserole for our market members! It's a layered dish, but the preparation is simple and outlined in the video.
Start by adding enchilada sauce to a deep dish. Then layer corn tortillas, a veggie and black bean mix, and cheese. Repeat the steps until the dish is full, then bake until the cheese is melted!
For an even healthier option, Susan suggests cooking your own black beans instead of using canned beans to reduce sodium. This dish is vegetarian, but chicken, ground beef, or tofu could be added for extra protein.
