District Carolinas Spring Technical – March 20: Session Spotlight – NA Beer Off-Flavors and Microbial Stability

Producing non-alcoholic beer presents a unique set of technical challenges, particularly when it comes to off-flavors and microbial stability.

At the Spring Technical, Alex Titov of Lallemand Brewing will lead a sensory-focused session exploring common off-flavors encountered in non-alcoholic beer, where they originate, and what brewers should consider when managing stability in these products.

As more breweries explore the NA category, understanding these technical considerations is increasingly important for producing consistent, high-quality beer.

The MBAA District Carolinas Spring Technical is this Friday, March 20, bringing together brewers and beverage professionals from across the region for a day of technical discussion, learning, and networking.

Session Spotlight – Inside the Can: Technical Considerations for Modern Beverage Packaging

Packaging is one of the most critical steps in delivering a stable, high-quality product to the consumer. For this session, we’ll hear from Nick DiBlasi, Regional Lead (NC) with Iron Heart Canning.

Nick is a veteran of mobile canning operations and works with breweries across North Carolina and the surrounding region every week. His hands-on experience operating mobile canning lines across a wide range of breweries gives him a unique perspective on the real-world packaging challenges brewers face.

During this session, Nick will discuss common issues encountered during canning runs—from dissolved oxygen pickup and carbonation management to seam integrity and preparation of beer for mobile canning operations.

The session will also include a brief walkthrough of a live canning operation, allowing attendees to see the process in action while discussing practical packaging considerations directly from the line.
