What happens when some of the baking and pastry industry’s brightest minds come together? Conversations worth continuing long after the conference ends.

Pastry Con 2026 brought together pastry chefs, educators, industry leaders, and baking professionals to exchange ideas, share experiences, and explore what’s next for our industry.

The Retail Bakers of America was proud to be part of those conversations, including recording episodes of The Perfect Rise podcast with some incredible voices in pastry.

From industry insights to professional journeys and the importance of preparing the next generation of baking professionals, these conversations remind us why connection, education, and community matter.

A special thank you to Maura Metheny, Chef Alex Darbousset and Chef En-Ming Hsu for sharing their perspectives and experiences with us.

We look forward to bringing these conversations to The Perfect Rise audience. Stay tuned for upcoming episodes!

What happens after someone says, “You should sell this”?

For Chef En-Ming Hsu, building Sip Extraordinary Drinking Chocolate meant learning about manufacturing minimums, packaging, wholesale accounts, freight, and the responsibility of owning inventory that still needs to sell.

Even a world champion pastry chef has new things to learn when she becomes a product business owner.

Recorded live at PastryCon, this episode of The Perfect Rise takes an honest look at turning pastry expertise into a business. Chef En-Ming joins Chef Kimberly Houston to discuss protecting product quality, finding business mentors, and making the difficult decision to close her longtime consulting business so Sip could receive her full attention.

If you’ve considered packaging a signature product or adding wholesale to your bakery, this conversation gives you plenty to think through before taking that next step.

Certification is about more than earning letters after your name—it’s about challenging yourself, strengthening your skills, and continuing to grow in the baking industry. 👨‍🍳🥐

Chef Michael Landman of Revent is currently on his own RBA certification journey as a Certified Journey Baker (CJB) and Certified Baker (CB) candidate. We love hearing directly from bakers about why professional certification matters and what it means to invest in your craft.

We’re also incredibly grateful to Revent for its continued support of the RBA Certification Program. Their commitment helps RBA provide opportunities for bakers at every stage of their careers to test their knowledge, demonstrate their skills, and continue moving our industry forward.

Thank you, Michael, for sharing your journey—and thank you, Revent, for investing in the future of professional bakers! ❤️

It’s always a treat to visit our RBA members! 🥐🍪
This weekend, RBA Executive Director Marissa Sertich was in Cincinnati, Ohio, and had the pleasure of stopping by two longtime local favorites and RBA members, Busken Bakery and Servatii Pastry
One of the best parts of RBA is getting to connect with the bakeries that make our industry so special. It’s always wonderful to see our members in action and celebrate the businesses that are such an important part of their communities.
Thank you to Busken and Servatii for being part of the RBA community!

Did you catch last week's webinar on opening your second retail bakery location?

If not, RBA Members can now watch the recording on RBA Connect. In this panel, experienced multi-unit operators and owners shared practical lessons on staffing across locations, developing managers, building systems for growth, and maintaining quality and culture as your business expands.

As your organization grows, your role has to grow with it. That means being intentional about where you spend your time—and trusting your team to take ownership of the things they’re equipped to handle.

🎥 Watch the recording now on RBA Connect, exclusively for RBA Members.

Being a great baker can get your business started. Understanding the numbers is what helps it survive and grow.

Certified Master Baker and former bakery owner Matt reminds us that a bakery has two essential sides: the craft and the business. Once you have mastered the product, sustainable growth requires understanding payroll, ingredient costs, rent, insurance, cash flow, profit margins, and the key performance indicators that reveal what is actually happening inside your operation.

As Matt’s father told him, “You can make a lot more money behind a desk than you can behind a bench in the bakery.”

The bench creates the product. The numbers protect the business.

Which side of your bakery needs more attention right now: the craft or the numbers?
