Ingredients
1. Loaded Baked Potato Salad
6 or 8 medium or small russet potatoes, washed and dried
¼ cup olive oil, extra virgin
1¼ cups sour cream
1 cup mayonnaise
1 pound bacon, cooked crisp and crumbled (reserve ¼ cup for garnish)
½ cup thinly sliced green onion,
½ cup diced red onion
2 teaspoons kosher salt
1 teaspoon cracked black pepper
2½ cups shredded cheddar cheese, divided (2 cups and ½ cups for garnish)
2 tablespoons thinly sliced green onions for garnish

2. Mustard Potato Salad
5 pounds golden potatoes, or red potatoes (do not peel before boiling)
1 tablespoon kosher salt
2 tablespoons apple cider vinegar, or white vinegar
2 stalks celery, chopped (about ¾ cup)
6 eggs, hard boiled and chopped
2 cups Miracle Whip, mayonnaise, or a half-and-half combination (If using only mayonnaise, add 1 tablespoon of vinegar. If using a half-and-half combination, add ¾ teaspoon of vinegar)
½ cup pickle relish
1½ tablespoons yellow mustard
1 medium onion, chopped
1 tablespoon fresh dill, chopped
¼ teaspoon salt
¼ teaspoon pepper
paprika, sprinkled on top (optional)

3. Bacon Ranch Potato Salad
3 pounds baby red potatoes
2 tablespoons white vinegar
1 cup green onions, diced
1 cup cheddar cheese, shredded
1 cup cooked bacon, crumbled
1 bottle ranch salad dressing, 473 milliliters
1 teaspoon cracked black pepper
½ teaspoon paprika

Ingredients
1. Mexican Beef & Rice
2 tablespoons olive oil
1 white onion, diced
4 cloves garlic, minced
1 pound ground beef, lean or extra-lean
15 ounces corn kernels, drained and rinsed
15 ounces black beans, drained and rinsed
1 envelope taco seasoning (2 tablespoons)
14 ounces chunky salsa, mild or medium
1 cup minute rice, uncooked
1½ cups low-sodium chicken broth
2 cups shredded Mexican cheese, divided in half

2. Hamburger Rice
1 pound lean ground beef, I used a 90-10% blend
2.2 ounces Lipton Beefy Onion Soup Mix,
21 ounces cream of mushroom soup
4 ounces sliced mushrooms, drained
2 cups beef broth
¾ cup whole milk
¾ cup sour cream
½ teaspoon salt
½ teaspoon black pepper
2 cups Minute Rice white rice
8 ounces Colby jack cheese, shredded
1½ tablespoons fresh parsley, chopped (optional garnish)

3. Beef Noodles
12 ounces egg noodles
1 tablespoon olive oil
1 tablespoon butter
1 pound ground beef
1 onion, finely diced
1 bell pepper, finely diced
2 teaspoons garlic, minced
salt and pepper, to taste
1 teaspoon Italian seasoning
½ tablespoon Worcestershire sauce
½ tablespoon soy sauce
14.5 ounces roasted garlic and onion tomatoes, not drained
1 can cream of mushroom soup
1 cup mozzarella cheese, shredded
1 cup cheddar cheese, shredded
¼ cup parsley, chopped
