Love found its way to the table on February 11, 2026, when members of the Vail Bailliage — joined by friends from Albany, Cincinnati, Houston, and Wichita — gathered for a five-course culinary celebration.

Under the theme 💖 The Food Language of Love 💖 every course told a story: from the flirtatious brine of French Kiss Oysters and a cherry–Champagne spritz, to the indulgent 72-hour Wagyu short rib braised with rosemary and pomegranate, and finally a playful strawberry shortcake with Barros Vintage Port.

Each bite, each sip, each pairing was a celebration of romance, craft, and shared joy — a reminder that love, like a great meal, is best savored slowly, together. Vive la Chaîne!

On January 8, 2026, members and guests of the Vail Bailliage—along with colleagues from Albany, Cincinnati, and Fort Worth—gathered at R Farmers’ Market & Kitchen in Avon, Colorado, for a memorable winter evening celebrating craft and community.

The night opened with sparkling Roeno Trento DOC and passed bites before guests moved into the butcher shop for a rare, hands-on lesson in whole-animal pig carving. Guided by head butcher Adam Rosario and chef-owner Riley Romanin, attendees explored the skill and care behind each primal cut, followed by a demonstration of the shop’s signature porcini and truffle sausage.

A four-course dinner paired with Spanish and Italian wines curated by Giuseppe Bosco of Terre Madre Wines followed, highlighting Ora King salmon, scallops with pork belly, Mountain View Farm pork loin, and a decadent chocolate ganache torte.

Chef-owners Riley and Val Romanin were presented with a black Chaîne plate, and the R Farmers’ Market & Kitchen team received pins in recognition of an exceptional evening—one that truly embodied the spirit of the Chaîne.

On December 19, 2025, Vail Bailliage’s Société Mondiale du Vin gathered for “Favorite Wines from Recent Travels”.

Members and guests were welcomed with Taittinger champagne served in holiday snow globes. Before the festivities began, Bailli Andrea Eddy announced that she had a 10 Year Commandeur award to present Bailli Honoraire Doe Browning. How time flies when you are having fun in the Chaine!

Then the group went around and introduced their wine and told a story about how they discovered the wine. They also briefly described their small bite pairing for the wine. As avid travel enthusiasts, the gastronomes of the Vail Bailliage presented an excellent variety of wines from six countries: Australia, France, Italy, Lebanon, South Africa, and the United States (California, Colorado, & Oregon).

It was a wonderful start to the holiday season, and members came away from the evening with new wines to add to their cellars and new destinations to add to their travel bucket lists.

It is always a pleasure to learn about wine from Advanced Sommelier and co-owner of Root & Flower Jeremy Campbell. Our ever traveling Bailliage chose to learn about Croatian and Balkan varietals this time since many have either been to the Balkan area and unexpectedly loved the wines there or are getting ready to travel to the region.

So off we went on our wine journey tasting and learning about four varietals:

• Rodica Malvadiesel 2022: 100% Malvazija varietal from Gulf of Trieste in Slovenia. A white wine aged in acacia barrels with notes of white flowers, peach, pineapple and green tea.

• Skegro Krš Orange 2022: 100% Žilavka varietal from Mostar, Bosnia and Herzegovina. “It is impossible, they say, to make a drinkable orange wine...” said the back of the bottle. But drinkable it was! The wine obtains its unique color from an extended period of skin contact during fermentation. Instead of pressing the juice off the skins immediately like a traditional white wine, the skins of the Žilavka grapes remain in contact with the must, transferring color and tannins into the wine, resulting in a full-bodied, dry, amber-hued drink with a distinctive texture.

• Bura-Mrgudić Basina 2022: 100% Plavac Mali varietal from the Peljesac peninsula in Croatia. A red wine with rich, deep and earthy notes with softer tannins and amazing complexity reminiscent of a zinfandel.

• Piližota Babić 2022: 100% Babić varietal from outskirts of Šibenik, Croatia. A red wine aged in Slavonian oak barrels, with aromas of ripe dark fruit, particularly blackberries, blueberries, plums, and figs.

Everyone had a different favorite wine and was eager to learn more about these hard to find and minimally exported wines.
