Making Peach Jam and Peach Butter at home.
This is my second attempt at making jellies or jams. I made prickly pear jelly last year and while it was delicious, I did not quite get it hot enough and had to boil twice. Last year, I saw the Peach Truck advertised but was not quite ready to dive in. This year, I ordered 25 pounds of peaches and picked them up last week. I received 62 peaches.

Part of my plan was to make jam, freeze some, eat some and hopefully that was all. 25 pounds is a ton of peaches for 4 people. When looking for recipes, I found one for peach butter. I fondly remember eating my grandma's apple butter as a kid and had to try this recipe. I made about 7.3 pounds of peaches into 11 pint jars of peach butter and 6 pounds of peaches into 13.5 pint jars of peach jam.

These recipes used water bath canning so having a pressure canner is not required. This is a great way to save some sweetness for winter. My teen/preteen kids helped me and it was a great way to share family traditions with them.

I fill in my hunting off-season by planting a summer garden. I can or blanch most of the vegetables I grow. That way I can have clean and tasty veggies throughout the year.
If you haven't canned before the process is quite easy, yet time consuming. You can purchase "Ms. Wages" pre-packaged to can with, or find a canning recipe, I use both.
You need to be really careful when adding ingredients to (or leaving ingredients out of) a canning recipe. You are usually ok adding spices but when it comes to adding more produce or anything else it could throw off the acidity levels, thus making unsafe for canning.

🍅 Ingredients for Spagetti Sauce 🍝

25 Lbs. Tomatoes, 5 onions, 4 large red bell peppers, 1 large green bell pepper, 4 6oz cans tomato paste, 1/4 c. soy sauce, 3 Tbsp. Worcestershire sauce, 2/3 c. packed brown sugar, 1/4 c. sea salt, 10 cloves garlic chopped or minced, 3 Tbsp. fresh oregano, 3 Tbsp. fresh lemon thyme, 3 Tbsp. fresh basil, 2 tsp. red bell pepper flakes, 2 fresh bay leaves,
1 1/4 c. Fresh Lemon juice for jars

Instructions:

Fill a large pot or Dutch oven half-way with water, bring to a boil. Using a slotted spoon, add tomatoes one at a time until you can't fit any more (about 8-10 tomatoes). Boil for 1-2 minutes. Remove tomatoes one at a time with slotted spoon and plunge in an icewater bath. Peel and quarter tomatoes.

In a food processor, (or blender) cover and process green peppers and onions in batches until finely chopped (if you want to add extra flavor, saute the peppers and onions in a little oil and a pinch of salt before processing).

In a large stockpot, combine the tomatoes (do not discard excess juices from the tomatoes), onion/pepper mixture, tomato paste, soy sauce, Worcestershire sauce, brown sugar, salt, garlic, oregano, basil, pepper flakes, and bay leaves. If you want to make your sauce thick and smooth, use an immersion blender to blend the tomatoes until smooth with no large chunks (you can also blend it in batches in a blender). Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 hours, stirring every 15 minutes or so (tomatoes burn easily so keep an eye on it). Discard bay leaves.

Add 2 tablespoons lemon juice, 9 or 10 hot
1-quart. jars (depending on how much you have). Ladle hot mixture into jars, leaving 1/2-in. headspace at the top. Remove air bubbles; wipe rims and adjust lids. Process for 40 minutes in a boiling-water canner.
Set the jars aside (a day or two) until the tops pop.

I have FINALLY relocated from Fort Worth Texas to East Texas to take care of my elderly parents. I quickly discovered that moving is NO FUN. However, the move comes with time with my parents on their beautiful acreage. My Dad has dementia and my mom needs help. But, it looks like I will get some target practice and feral hog hunting done right on my own place! Oh, all while avoiding the poison ivy that grows EVERYWHERE! The photos show some of the damage these pests have done and of the “crew” doing it….two adults and eight babies. Hopefully next month will be photos of my “target practice”!

I’m starting to get ready for the Grand American in Sparta, Illinois—the biggest trapshooting event of the year!

Preparing for a major shoot involves a lot more than just practicing. Besides trying to get back into a regular shooting routine and rebuild my stamina, I also need to:

✔️ Adjust my sleep schedule so I’m not exhausted by the end of the day.
✔️ Start drinking even more water now, so staying hydrated becomes second nature while I’m there.
✔️ Get all my paperwork organized.
✔️ Pack all the necessities… and then pack double the clothes because of the heat (plus I love having matching outfits! 😄).

People often only see the competition side of shooting sports, but there’s a lot of preparation that goes on behind the scenes before ever stepping onto the trap line.

For those who compete in any sport or outdoor activity, what is something you always do to prepare for a big event or trip?

July was a full month of harvesting from the garden! Canning and freezing sweet corn, green beans, okra, tomatoes, blueberries, and peppers. The watermelons and cantaloupes are coming along nicely and should be ready to pick soon as well. There's nothing quite like knowing where your food comes from. If you aren't able to grow your own garden, I encourage you to visit your local farmers market and support your local farmers.
