What is Mahshi??! CASA Fellow Frank provides his culinary expertise once again.

“Zucchini stuffed with minced meat, rice, and spices cooked in a tomato broth. In this case Liza and I prepared the dish without meat for our vegetarian friends.” –Frank, CASA Fellow 2021-2022, Amman, Jordan

What is Mansaf??! CASA Fellow Frank explains.

“Mansaf is considered by many to be the national dish of Jordan; comprised of rice, slow cooked lamb, and Jameed sauce (sun dried yogurt balls). I cooked this meal at home and enjoyed it with CASAwiyyun and Jordanian friends.” –Frank, CASA Fellow 2021-2022, Amman, Jordan

-Fellows in the Kitchen-
"Have you tried Mansaf? Maqloubeh? Mahshi? Mlukhiyye? Jordanians are rightfully proud of their local cuisines, and they love to test a foreigner's immersion into the Jordanian culture by way of food. During our time in Jordan, Frank, Zach and I turned our apartment into a Jordaninan kitchen, cooking Maqloubeh for birthdays, Mahshi for Thanksgiving, and Mansaf just because we felt like it. We love hosting our cohort for gatherings and inviting our Jordanian friends to evaluate our tries at classic Jordanian dishes. We even discovered the dual use of the propane heater--cooking Manaqish and chicken while also keeping the house warm!” -Avery, CASA Fellow 2021-2022, Amman, Jordan
