Broccoli and peanut soba noodles🍜🍜

-Broccoli and peanut soba noodles is a delicious and satisfying dish that combines nutty and creamy peanut sauce with tender broccoli and hearty soba noodles. It's a great option for a quick and flavorful meal.

Ingredients:

150g soba noodles
1tsp sesame oil
Tenderstem® or purple sprouting broccoli
100g edamame beans
2tbsp smooth peanut butter
1tbsp soy sauce
1tbsp rice vinegar
1tbsp ginger, grated
1 garlic, crushed
lime, juiced plus wedges to serve
3 spring onions, sliced
coriander, chopped
2tbsp roasted salted peanuts, chopped

Directions:

-Cook the noodles in boiling, salted water for 4 minutes until tender. Drain and rinse well in cold water, then drain again and toss with the sesame oil in the sieve and leave.

-Blanch the Tenderstem® for 2-3 minutes until it’s vibrant green and still has bite, adding the edamame for the last 30 seconds. Refresh in cold water, then drain well.

-Whisk the peanut butter, soy sauce, vinegar, ginger, garlic and lime juice with a splash of boiling water to make a dressing.

-Cut the Tenderstem® into bite-sized pieces and add to a bowl with the noodles, edamame, spring onions, coriander and the dressing. Toss well. Serve scattered with the chopped peanuts, with lime wedges to squeeze over.

Spring green udon noodles🍜🍜

-Spring green udon noodles are a delightful and vibrant dish that combines thick, chewy udon noodles with fresh spring vegetables. This dish is not only visually appealing but also bursting with flavor.

Ingredients:

2 tsp vegetable oil
1 clove garlic, crushed
a thumb-sized piece ginger, shredded
1 red chilli, thinly sliced
125g shiitake mushrooms, halved
1 tbsp oyster sauce
½ tbsp light soy sauce
1 litre chicken stock
300g vacuum-packed cooked udon noodles
200g spring greens, shredded

Directions:

-Heat the vegetable oil in a pan and cook the garlic, ginger and ¾ of the red chilli for 2-3 minutes until softened. Add the mushrooms and cook gently for 5 minutes until beginning to soften then add the oyster and soy sauce and the chicken stock and simmer for another 5 minutes. Add the udon noodles and spring greens and cook for a few minutes to reheat the noodles and wilt the greens.

-Spoon into 2 bowls and sprinkle over the remaining chilli, if you like.

Chicken noodle soup is warm and comforting, and it’s great for a light lunch on a cold day.

I prefer to make my own chicken broth since it’s the star of the dish, but if you buy it from the store, be sure to get something low in sodium.

The best thing about this soup is that there are no rules to follow when adding veggies.

If you’re not a carrot lover, maybe try butternut squash. If you don’t love celery, why not add in some chopped leeks? It’s totally up to you.
