Bubby’s Recipe Box!

Recipe of the Week:

Ingredients:
1 can chickpeas, drained
2 garlic cloves
½–¾ teaspoons salt
¼ teaspoon cumin
Juice of 1 fresh lemon (3 tablespoons)
⅓ cup tahini
⅓ cup water
2–3 tablespoons olive oil

Instructions:
Place drained chickpeas, garlic and seasoning into the bowl of a food processor. Using the s blade, blend for a few seconds.
Add the lemon juice, tahini and water, blending well until smooth, scraping sides down as needed. Drizzle in olive oil towards the end.
*For a chunkier Hummus use only ¼ cup tahini and water.

Recipe of the Week!
Summer Potato Salad

Ingredients:

5 lbs Yukon Gold potatoes, peeled and cubed
7 small carrots, peeled and left whole or chopped
1 tbsp salt
6 raw eggs, washed
1 (11 oz) can Israeli pickles in brine, chopped
½ cup pickle brine
2 ½ cups mayonnaise (full-fat only)
1 tbsp Montreal Steak Seasoning (or a combination of salt, black pepper, and white pepper)
¾ tsp salt

Instructions:

Boil potatoes, carrots, and salt in a large pot. Add eggs if desired, remove after 5 minutes, and place in an ice bath.

Cook potatoes and carrots until fork-tender, about 15 minutes. Drain and cool for 20 minutes.

Chop carrots, potatoes, 3 eggs, and 5 yolks. Add to a large bowl.

Mix in pickles, brine, mayonnaise, Montreal steak seasoning, and salt. Combine well.
